2 cups whipping cream
Digestive biscuits 250g

My mother's version of this (talking early 1960s here) was orange jelly whipped with evaporated milk, and poured on top of mandarin orange segments to set. One packet of jelly (which came in rubbery cubes in those days), one tin of evaporated milk and one tin of mandarin orange segments. Easy!

If you blended in a handful of fresh cut-up strawberries before you added the cream, I imagine it would intensify the taste of the strawberries? I might try that as well.

Digestive biscuits are called that because they are easy to digest. Typically given to people who have had recent issues with stomach upset, ulcers, gastritis (inflammation of the lining of the stomach) nausea, vomiting or after prolonged period of fasting to gradually reintroduce solid food and also to toddlers who do not have a fully developed digestive system. The biscuits contain arrowroot flour that is easy to digest and gentle on the stomach.
