Great job chef !!! I had never heard of the corn flour ( starch ) trick in a meringue, but will try it the next time I do this pie. My wife's ex is a chef with a background in pastry and I''m guessing he knows that trick but neither she nor I did. I did your take on chicken Kiev last week and it was absolutely delicious. I made one small mistake and tried to insert the compound butter column while it was still too stiff after refrigeration, and ended up tearing one of the beasts but the leakage was minimal. Softer butter or bigger pocket next time, ha ha. ( insert your own joke here, LOL !!!!! ) Thank you for sharing your knowledge and techniques with us amateur cooks / chef wanna be's. Maybe this should be on Simon Mayo`s confessions but back when I was a child in the 70`s, I made one of those boxed cake thingymebobs, where you had all the ingredients in the box. Everything was going well until I took the pie out of the oven....... It slipped and all the meringue fell onto the floor. Did I confess.......no, I scooped up all the meringue, put it back on the pie and popped it back in the oven to brown. All of the family loved the pie and if they realised there was stuff in the meringue that shouldn`t have been there, they never let on. As I say, a bit muck can`t hurt you lol
At 6:56, the egg yolks should not be added directly to the pan. Instead, pour a small amount of the mixture into the bowl holding the egg yolks first to bring them up to temperature. This process is known as tempering. Then add the contents of that bowl into the pan. The reason for doing this is to avoid the risk of having the eggs turning into scrambled eggs if they are added to the pan when they are at room temp.
Rick. I cheated on this recipe. I used the pastry, meringue and all of your techniques but filled it with a key lime pie filling and muddled through. The pastry was crumbly perfection, the meringue a triumph and the filling was definitely LIME! Thanks for adding another string to my ancient bow
That is the tallest, step-aside you wimps, Lemon Meringue pie I have seen. The kind that makes the Church Ladies mark you for shunning at social events. A Grande Dame of Lemon Pies if there ever was one. If you are in a time pinch, a perfectly respectable crust is to be found by using Graham Cracker Crumbs that blends in very nicely with this pie and is easier and quicker to prepare. For the Sneaky Cooks, you can buy already made in the pie plate Graham Cracker Crusts at many grocery stores, just keep mum about it. Bake for 10 mins., then add your filing. 🥧 ❤
You shouldn't have bothered to stick the plastic wrap into the lemon pudding ... just cover it until it cooled. Also you really don't need to add cornstarch to the meringue. Cornstarch is loaded with pesticide residue.
