  • Siopao is traditionally Chinese bun and literally means hot bun.
    It is a popular snack sold mostly by bakeries and vendors and in many Chinese restaurants and eateries in the Philippines. There are different varieties based on the filling: pork asado or bola-bola (a combination of pork, chicken, beef, shrimp or salted duck egg). There is also a baked variety.
    An old urban legend or canard alleges that siopao is made from cat meat, due to the relative cheapness of siopao and anti-Chinese prejudice.
    Siopao recipe
    Bread flour -350g
    Corn starch-50g
    Salt - 4g
    Sugar- 80g
    Baking powder- 8g
    Yeast -8g
    Vegetable oil-40ml ( can be replaced by shortening)
    Bread improver- 3g(optional)
    Fresh milk - 200ml
    10ml - vinegar ( to make the dough whiter)
    Note: bread flour and cornstarch can be substituted with 300g all purpose flour ( bleached) and 100g cake flour ( bleached ) .
    Filling
    Ground pork- 500g
    Onion - 20g
    Garlic - 15g
    Water - 250ml
    Corn starch- 16g
    Oyster sauce - 10ml
    Soy sauce- 30ml
    Sugar - 15g
    Star anise-1/2 tsp
    Salt and pepper
    Sauce
    Water - 250ml ( much better if pork broth )
    Oysters sauce - 15ml
    Soy sauce-15ml
    Star anise - 1 whole
    Onion- half (small size)
    Garlic - 1 clove
    Sugar - 15g
    Vinegar-1tsp
    Salt and pepper
    Siopao recipe( tbsp and cups conversion)
    Bread flour -2 1/2 cups
    Corn starch-6 1/2 tbsp
    Sugar- 3/8 cup
    Baking powder- 1 tbsp
    Salt - 1tsp
    Yeast -1tbsp
    Vegetable oil-3tbsp ( shortening)
    Bread improver- 1 tsp (optional)
    Fresh milk - 3/4 cup and 2tbsp
    3/4tbsp - vinegar
    Note: bread flour and cornstarch can be substituted with 2 3/4cups of all purpose flour ( bleached) and 7/8 cup of cake flour ( bleached ) .
    Filling
    Ground pork- 500g
    Onion - 1/2 pc
    Garlic - 2cloves
    Water -1 cup
    Corn starch- 2tbsp
    Oyster sauce - 1 tbsp
    Soy sauce- 3 tbsp
    Sugar - 1 1/2tbsp
    Star anise (1 whole )
    Salt and pepper
    Sauce
    Water - 1 cup ( much better if pork broth)
    Oysters sauce - 1 1/2tbsp
    Soy sauce-1 1/2tbsp
    Star anise - 1 whole
    Onion- half (small size)
    Garlic - 1 clove
    Sugar - 1 1/2 tbsp
    Vinegar - 1 tsp
    Salt and pepper

    Thank you so much for sharing this recipe..i have tried 4 siopao recipes from YT in one day 3 of them failed one of the 3 the color became yellow to brown and this is the 4th one, the last one that turns out perfect.....the search is over...God Bless..🙏

      I dont over proof gaya ng ginagawa mo rest saglit then sa huli ko na lang paalsahin ng 45 minutes.

      It’s just an option. I just want my siopao less chewy so i mix with cake flour . Because all purpose is slightly higher of gluten content than cake flour . In addition to that the softness will stay longer even it is already cold.

      Wala Po kase cake flour at all purpose dito sa lugar namin kaya gumawa Po ako alternative recipe . Pkibasa lng Po ung description. Naka note nmn Po .

      Kung malamig tubig niyo tapos active dry yeast ang gamit niyo. Hindi po siya gaanu aalsa isa pang factor malamig ang lugar niyo Po .

      Mejo malamig Po pla jan ngayon . Tapos dry yeast Po gamit niyo . Instant dry yeast Po ang gamitin niyo . Then Kung pwede Po sa warm temperature niyo paalsahin. Kapag active dry yeast Po ang gamitin niyo kailangan mix niyo Po sa warm water then add ng konting sugar tapos 5-10minutes niyo Po paalsahin muna bago ihalo sa masa.

    chef may difference ba kung 3 inches lang ang steamer namin? nasa 2inches lng height ng water. ginawan lang ng paraan kasi wala kaming steamer . pinatong namin sa rack yung siopao. tinakpan ng kawali na may tela. ok lang ba yon????

      ang laki ng difference.
      sobrang nagpapasalamat po ako sa inyo!!!!!!
      medyo kailangan palambutin ko lang daw ang dough pero ok na ok sya. ano po ba kailanfan ko gawin
      nalito lang kasi kami talaga sa sukat di ko sure sa proper na sukat ng cake flour and all purpose flour. wala kasi kaming makitang conversion calculator dito.
      ml cups lang po at table spoon.
      basta ginawa ko lang sir kanina
      cake flour 1/2 & 1/4 cups
      all purpose flour 2 cups po na sinabi mo sa description nalimutan ko lang po kung ilan kasi di ko maaalis dito mabubura po. tynype ko.
      tapos wala akong bread improver. medyo hard sya noong minamasa ko

      Kapag cakeflour kase mejo matakaw sa tubig . Mas mlambot po ang result niyan kapag may bread improver
