Slapping, pounding,punching stretching, folding ung procedure ng pag masa yan po ang ginagawa mo chef. Ang oil na dapat gamitin ung vegetables oil madalas gamit ko sunflower oil. i think ang logic nito kung bkit 4 ing. lng cnabi nya is. meron tayo sa bahay (lagi) ng water, oil and salt. which is di mo na need maghagilap o bumili pa. Basic kumbaga? flour,yeast,sugar and cheese? lagi ba tayong my stock nyan? sugar meron, pero hindi sapat for sure, so bibili k prin. basta logic nlang cgro yun. :)

Gloves are really not necessary in dough handling, even with Covid. Bread baking uses Yeast, with its presence it deter bacterial growth. If there is bacterial growth, that means the yeast is already over taken. Viruses on the other hand will be killed off in the oven with 350*F (177*C), which is the usual baking temp. There is a misconception that gloves are sanitary. It is if it is sanitized gloves that went through Autoclave. Other than that, it is just use to protect the worker's hands. Washing hands with soap and water is definitely cleaner.

You can use either All Purpose Flour (APF) or Bread Flour (BF or Strong Flour). In the Philippines Class 1 is Bread Flour. What is the difference. Bread Flour have higher protein content than APF. APF has high enough protein for soft bread and low enough for cake... hence all purpose.
We have a bakery before, you don’t have to put it in the fridge just room temperature lang.. that bread we called it cheese dog the only difference lang we don’t rolll the dough to the bread crumbs.
