Pork Asado Siopao
Pork Asado Filling Ingredients:
500 to 600g pork, cubed
1/2 cup oyster sauce
3 tbsp brown sugar
5 cloves garlic, minced
1 large onion, sliced
5 pcs Laurel leaves
3 pcs star anise
Ground black pepper
1/2 tsp iodized salt
1 1/2 cups of water or as needed
1 1/2 tsp sesame oil
1 cinnamon stick (optional)
2 tbsp cornstarch
1/2 cup water to dissolve cornstarch
Siopao Buns Ingredients:
250g (1cup) warm water
7g (2 1/4 tsp) instant yeast
400g (2 3/4 cup) all purpose flour or cake flour (good quality flour or bleached flour for a whiter dough)
50g (1/4 cup) white sugar
60g (1/2 cup) vegetable oil or vegetable shortening (veg shortening would be better to make the dough whiter)
4g (1 tsp) baking powder
1/2 tsp iodized salt
1/2 tsp baking soda
1 tsp vinegar
• 2 tbsp of white vinegar for the steaming water
• 60 to 65g each , 12 pcs
• You can use 3oz cupcake liner or cut out parchment paper
• Steam for 15 minutes in high heat then leave the cover for 5 mins before removing the siopao from the steamer.
• If you want to achieve a very white dough like the commercial one, you need to add dimsum whitening additive with the dough mixture. But if you want healthier food at home then go for the vinegar on the steaming water.

Invest na po kayo sa weighing scale pag gumagawa po kayo ng breads at siopao or we will not have the same outcome kasi po hindi accurate ang cups. Pang mga pastries and cupcakes tolerable pa ang cups measurements but not in this type of food making po. Thanks

Pampa puti ng dough ang vinegar at para makatulong maging fluffy ang dough kaya gumamit ako ng baking soda mix w/ vinegar.

I added vinegar to whiten the dough and the baking soda will help make the dough fluffy.

I can not get mine to white, what is the secret
Hindi nyo po yan mapapaputing puti gaya ng sa mga chowking or 7-11 kasi may chemical po silang nilalagay na dough whitener don. Pero pag icompare nyo po sa walang suka at merong suka, makikita nyo po na mas darker kulay pag wala po kayong ginamit na suka. If gusto nyo po maputi talaga like pang negosyo, buy po kayo dough whitener na inihahalo sa pag mix ng dough po.

Hello Mai, I followed your siopao recipe. Your recipe is perfect. Very tasty. But I have a problem, my siopao becomes brownish after steaming. Your recipe is great but what can you tell me that I am doing wrong. Nagiging brown ang dough Pero ang sarap pa ren.
Nasa klase ng all purpose flour na gamit, dapat bleached all purpose flour para maputi although hindi mo talaga ma achieve yung kasing puti ng sa chowking kasi may hinahalo na silang dimsum whitening additive sa mga commercial siopao. Vinegar lang sa water na ginagamit nating pang steam ang mag lessen ng brownish color at mag lighten ang kulay nya compare sa walang vinegar ang water para hindi na tayo mag add ng chemicals. The brownish color actually means na walang additives na halo ang siopao.
Use bleached flour and Vegetable shortening instead of oil para makatulong sa maputing dough.
Sinunud ko nman lahat.bakit Hindi parin maputi pag naluto na. Pero masarap.
Nasa klase ng harina na gamit, pag gusto mo ma achieve yung mala chowking na siopao, naglalagay kasi sila ng dough whitener para puting puti lalo na kung gagawin mong business pero kung pang pamilya better to not add any chemicals at all.
