I saw someone used cornstarch to replace the tapioca starch and got a beautiful result. You can also use sweet potato starch instead, which is very close to tapioca starch.

I tried it. I think something may have gone wrong when the dough was rising though. When it came out it was way too sticky, and when I kneaded it I had to add a lot more flour, the bubbles mostly collapsed and the end product had a texture closer to pot stickers.
@@lucymeishinobinderglutenfree I used a scale. The potato water was bubbling when I added the tapioca, but the pot might have been too big making it boil at an inconsistent temperature, though it still congealed into a glue like consistency. The problem was that the final product was like cooked glue, not anywhere close to the fluffy kind of bao. I do notice bubbles in the picture you have of your final product, and those didn't exist in mine, so definitely some difference.
@@andrewwicks8352 It looks like there is no problem making glue. Was there too much water? Or was your mashed potatoes too watery? The buns should be soft and fluffy and close to the texture of regular buns.
@@lucymeishinobinderglutenfree Maybe a difference in the mashed potatoes then. I didn't look at your video on it, I just boiled them till they were soft enough to mash.
@@andrewwicks8352 i think it may be because you boiled instead of steaming them. Or maybe you used a different kind of potato. The white flesh sweet potatoes she used in the video are a lot dryer than most potatoes.

Can you get gluten free soy sauce? You can mix it with honey to substitute the sweet soy sauce. Mushroom sauce can be omitted.

No two doughs were created. Premade tapioca gel mixed with gluten-free flour eliminates the need for binders and makes the dough easier to work with.

Possible reasons were that the water was not boiled when making the tapioca glue. Ingredients were not weighed, but measured by volume.
