No Binder Gluten Free Char Siu Bao (Dim Sum) [Dairy Free]

  • In this recipe I didn't use any branded gluten free mixed flour, but used my own mix. I also didn't use any binders like xanthan gum and psyllium which typically are used in GF cooking. The dough was amazing! You can handle it like a wheat dough. I created a way to get this result. That was a milestone to me in GF cooking. Xanthan gum or psyllium is an option, not a requirement. I know some people don't like them, and neither do I.

    Ingredients:
    1. Dough
    80g Tapioca starch
    120g Water
    100g Mashed sweet potato
    20g Sugar
    5g Yeast
    120g Rice flour
    2. Filling
    Char siu
    200g Pork shoulder
    1tbsp GF Soy sauce
    1/2tbsp GF Mushroom sauce
    1/2tbsp GF Sweet soy sauce
    1/2tbsp Cooking rice wine
    1/2tbsp Balsamic vinegar
    1/2tbsp Honey
    20g Sugar
    Ginger slices
    Char siu sauce
    80g Mashed sweet potato
    1tbsp GF Mushroom sauce
    1/2tbsp GF Soy sauce
    1/2tbsp GF Sweet soy sauce
    1/4tsp Salt
    1/2tbsp Olive oil

    Finally, a gluten free bao recipe that really works! I tried it for the first time and it turned out beautifully, the dough was amazing! Just like you said :) The bao texture was so soft and fluffy and slightly chewy, just the way I like it. Thank you so much for sharing this amazing recipe ❤️

    You are the best to help people who can't eat gluten. As i can't eat tapioca starch, may i use cornstarch instead? If not, what is your brillent suggestion? Thank you so much again for your great effort and contribution

      I saw someone used cornstarch to replace the tapioca starch and got a beautiful result. You can also use sweet potato starch instead, which is very close to tapioca starch.

    Hi there! I love this channel since my partner is dairy and gluten free too and I would love to make these! Is there a way to substitute the gluten free mushroom sauce or sweet soy sauce for other common ingredients? Since my pantry space is limited at school and I didn't see those things at my local Asian market I might want to substitute. Thanks so much for all your videos and hard work!!!

      Can you get gluten free soy sauce? You can mix it with honey to substitute the sweet soy sauce. Mushroom sauce can be omitted.

    Hi! What kind of sweet potato is this? The ones i can get is Orange inside, but the ones you used was white!

      It is a kind of sweet potato with purple skin and white flesh, with less water content than orange sweet potato. You can replace it with potatoes.

      Yes, you can use the potatoes which are high in starch and low in moisture, such as russet potatoes.

      You can use mashed potatoes, mashed yam, etc., but pumpkin is not suitable, its moisture is too large.

    Question: Why is it necessary to create two doughs and them mix them together. Can you explain the role of the two doughs? Why not just add them together at once? I know that it has a reason, but I don't understand it. It would be nice if you could explain in detail! Thank you!

      No two doughs were created. Premade tapioca gel mixed with gluten-free flour eliminates the need for binders and makes the dough easier to work with.

    Hi, my son is allergy to yiest besides those normal wheat flour. May I know what can I replace for the yiest?

      I haven't tested that. Someone use baking powder to replace yeast, but I think it will be different in the taste.

    I tried it. I think something may have gone wrong when the dough was rising though. When it came out it was way too sticky, and when I kneaded it I had to add a lot more flour, the bubbles mostly collapsed and the end product had a texture closer to pot stickers.

      Possible reasons were that the water was not boiled when making the tapioca glue. Ingredients were not weighed, but measured by volume.

      @@lucymeishinobinderglutenfree I used a scale. The potato water was bubbling when I added the tapioca, but the pot might have been too big making it boil at an inconsistent temperature, though it still congealed into a glue like consistency. The problem was that the final product was like cooked glue, not anywhere close to the fluffy kind of bao.
      I do notice bubbles in the picture you have of your final product, and those didn't exist in mine, so definitely some difference.

      @@andrewwicks8352 It looks like there is no problem making glue. Was there too much water? Or was your mashed potatoes too watery? The buns should be soft and fluffy and close to the texture of regular buns.

      @@lucymeishinobinderglutenfree Maybe a difference in the mashed potatoes then. I didn't look at your video on it, I just boiled them till they were soft enough to mash.

      ​@@andrewwicks8352 i think it may be because you boiled instead of steaming them. Or maybe you used a different kind of potato. The white flesh sweet potatoes she used in the video are a lot dryer than most potatoes.

      番薯有很多品种,我用的是紫皮白肉番薯。你可以用土豆泥或山药泥代替。
