You can't use this recipe for doughnuts. I have doughnut recipe without xantham gum in my book. Please watch my video for the introduction of the book.
Yes, I weigh the raw ingredients. I cut down on the sugar. Will that affect the dough? Is it possible to freeze the dough? How long can I keep the dough in the freezer? Unfinished bun can steam again the next morning?
The sugar can be reduced by half and the dough should be kneaded evenly. I have not tried refrigerated dough. After the buns are wrapped, they should be continued to complete the remaining steps. The cooked buns can be frozen or refrigerated.

Mash sweet potato is a necessary ingredient. I have done this recipe many times. It should be no problem to replicate if following the instructions.
