Any benefit to leaving some of the older wall system where you can, like noise reduction compared to sheetrock?

All interior walls are supporting the structure and the main wall is being increased to a 2X6 wall for even better support. Noise reduction not an issue in this old home because you want heat transfer.

Why does all the old lath need to come out?

Mostly to get access for framing repairs, then insulation. But not all of it. We are saving a section of the old lath to preserve its history in the stairwell area.

Maybe just knock down with excavator and rebuild new... might save time.
