    As always...I open up your vlog, and my breathing slows, my tension-hunched shoulders drop back down below ear level, and I relax into the music, the flowers, and your soothing, matter-of-fact instructions which make a recipe do-able. A bread recipe I'd been a bit intimidated by before watching this. Watching these is like re-visiting a much softer and more peaceful era. It is a welcome respite from the cares of the world.     One of the traditions in the UK of my childhood and adolescence, in the 1930s & 40s which has almost disappeared is "high tea", particularly prevalent in Scotland, Ireland and the north of England. This was a mixture of afternoon tea and supper usually eaten in late afternoon or early evening. It often included cold meat or fish and salad, bread & butter, or something savoury on toast, followed by a light desert and/or Cakes.
    In my family, we would have our traditional lunch on Christmas Day at 1.00p.m., followed between 5-6p.m. by a sort of high tea, which always included anchovy toast, i.e., Gentleman's Relish on buttery toast (don't know if one can get Gentleman's Relish in US - an anchovy paste), Devonshire splits (little round rolls of rich white dough - the original base for a cream tea. Scones are a modern Scottish introduction. The splits were topped with clotted cream and preserved ginger in syrup. This was followed by warm mince pies and my mother's wonderful Christmas cake (an Irish country house recipe). We rarely had room for the mince pies and cake! The mince pies were always served in a silver plated entree dish lined with an oval unperforated doily and the dish's cover. There was always a small plate of my mother's wafer thin homemade wholemeal bread and butter; I suppose, to offset the pervading richness of the other food. To add a touch of healthiness there might be a few sticks of celery to accompany the anchovy toast. As always, your afternoon tea looks delicious and your scones looked especially good and authentic. I have yet to have a go at the chocolate mayonnaise cake. In view of escalating food prices here I have taken to making my own mayonnaise - have a really crafty recipe using a stick blender in a jug and using a whole egg, flavouring it any way I fancy at the time. Obviously, I shan't be incorporating garlic or mustard into my chocolate cake! Just another thought - I'm afraid I do ramble on - as Easter is approaching, are you familiar with delicious hot cross buns (they're not annoyed but are decorated with an applied cross on top)? They are traditionally served on Good Friday, a fruited spiced yeast bun enjoyed after the rigours of Lent. They can be eaten plain or buttered or excellent toasted.

    Hello Kevin. Lovely vlog. I too enjoy preparing and serving a delicious and elegant afternoon tea for friends, with fine china and best linen. It’s a perfect expression of slow food and slow living. Hostess/host and guests have set aside their time and all are truly focused on the presentation, and on happy light conversation with each other, the emphasis being on relaxing and taking each delicate course in turn . A good tea should leave one feeling replete and take at least at hour. It’s a wonderful respite from our busy and often over scheduled lives, and a little episode of luxury, that in my experience, everyone seems to enjoy. ❤

    We took my niece and great niece to afternoon tea for Valentines day. We got all dressed up for the occasion. At 10 years old , my great niece was mesmerized by all the litte foods and treats . Fell in love with cotton candy tea. A new one on her mom and I. ☕💗

    Just today I watched a video of a woman making round tea sandwiches and she cut her's out just like this. But she freezes her bread slices first so that they don't smush down and have cleaner edges. Very clever! 👍🏻👍🏻

    Hi Kevin! Love the fabric texture and colour of your jacket in this video. Long ago in Toronto you could go for afternoon tea on the top floor of Eaton's, a department store. Cucumber sandwiches were served and some of the ladies wore long gloves and hats. Sometimes there were musical performances on that floor and Carlos Montoya was absolutely amazing. 💞💞💞

    Beautiful, as always, Kevin. My späezle thingy is arriving today. I'm drawing the line at this bread pan as I can only tackle "no knead" bread --which I make 2-3 times a week. But that's about as ambitious as I get with bread. I've got two loaves of pumpkin bread in the oven. (It's still very much winter here --more snow on the way tomorrow). I bet pumpkin bread, baked in mini loaf pans and sliced, would be lovely for teatime, don't you think? Cheers!

    I know that if my father was still alive he would be in the kitchen making bread. He was a baker and every weekend he would bring home bread for the next few days and Danish Pastries for Sunday. I guess the bread could be called Danish bread because he was from Denmark! If any of us was I’ll he would make fresh rolls for us. I really miss him.❤

    What a great idea to use avocado in tea sandwiches. I love how you can pull things out of your freezer. You make it look so easy. Thank you for showing us how. It's been so long since I have had friends over for a teaparty. Maybe I'll set a goal for a springtime tea. I know that my friends would appreciate it and enjoy.     A lovely video with delicious tea time sandwiches, scones and olive oil cake.
    Kevin, I don't know if you remember me. I'm Judy from Ontario.
    I was the one who had life saving surgery last year and was nourished only by a liquid which bypassed my stomach. I could not eat any food by mouth for nearly a year. But I enjoyed watching you cook/prepare delicious foods anyway.
    Fast forward from last March 2022, to now and I'm on the mend and actually eating real food once again (I can't begin to tell you how wonderful it was to taste food again!
    So now I watch for new episodes of yours and I can make some of your recipes. I'm still on a 'soft food diet but I'm making great progress.
    I can even have those tea sandwiches (minus the crust) and some olive oil cake with the strawberries!
    Thank you, Kevin, for sharing these lovely foods!
    Oh! And tea! I can have some of your tea, as well!
    I've left a horrendous year behind me and will fill this new year watching your new videos.
    And growing Petunias and cherry tomatoes from seed for my balcony.

    I've never seen Pan de Mie made before...now that I see the process, it's no wonder it's such a delicious and pretty bread! You used to be able to get the Pepperidge Farm thinly sliced white bread in grocery stores, but I never see it anymore. It was a very good bread for making tea sandwiches...but not as good as your beautiful bread. Thank you for sharing the "art of the tea sandwich" with us!

    In our town just west of Portland Oregon, we have a steampunk-themed tea room called Clockwork Rose. They host full afternoon teas. We went there for my birthday last Fall, and it was so fun and so delicious. My first time having clotted cream. So yummy! You'd love it.

    I learned to make pain de mie during the pandemic when it wasn't easy to shop. It's such a wonderful bread and makes perfect sandwiches, toast, and french toast. I also enjoyed some ideas for tea sandwich fillings. Another lovely video. 🥰

    I've had a Pullman loaf pan on my wish list for a long time but have never bought it. Oddly, a days after this video I bought a cookbook that showed a "work around method" for a Pullman loaf. Use a regular bread pan and allow the bread to rise near the edge. After putting the bread in the oven cover it with an aluminum sheet pan, weighted down with an oven-safe heavy skillet or other heavy object. Voila! A DIY Pullman loaf without a real Pullman pan. I will have to try this with a Nordicware sheet pan and my cast iron skillet as weight. 😉

    How nice to have some elegance in my life, though it's only on a screen. I'm curious about the sugar. It looks as if it's little balls of different sizes. I've never seen that. Kudos for a superb video.
