This is how I did it too. They came out great, better then store bought. FYI, for some reason my plant that produced the black seeds had nothing in the seed pods?? Empty? The striped seeds like shown had nice seeds in them??
After cutting one of my sunflower heads, I hung it up to dry for a week. When I harvested the seeds, there was very little meat /seed in the seeds. Does that mean I cut if off too early? Better to leave the head on the plant longer and just cover it with cheesecloth? (Wondering if the seeds get meatier the longer the sunflower stays on the plant?)
So sorry for the late and long reply, but from my experience, even if you did harvest too early, there would still be at least partially developed seeds and I would think you would still have gotten a good harvest. This is of course unless they were cut way too early, but that is unlikely since for that to be the case, you would have to harvest while the plant was still flowering. The likely reason for this could have something to do with the genetics of the plant, or a lack of nutrition in the soil. It could also be that those seeds just weren't pollinated. This same thing happened to me in the harvest I showed in the video, and around 5% of the seeds harvested were completely empty. I suggest trying seeds from different places/sources, to ensure that the genetics of the plant are good. I would also try leaving it on longer next time though, and as you said, you could cover it with a cloth to prevent those feathered flying things from eating the seeds. I just harvested my first mammoth sunflower. The back was turning yellow and brown, the petals were long dry, seeds were striped, and it was facing down. When I harvested them, they were fuzzy, but firm. Did I harvest too early?
No, I think you did a great job with timing, If the back was getting brown and yellow, and the seeds were striped, I would say you harvested at a good time.

I don't remember exactly, because I forgot where I put the package it came in, but from what I remember, it is a Common sunflower, (Helianthus annuus)
