    The way this worked is we would have burger patties cooking on the grill, raw on the right and cooked on the left. As those on the left cooked more and more they would eventually dry out if not sold and we put them in a container next to the grill. When the container was full we put them in the refrigerator. Sometimes you did not generate enough "chili meat" during the day and might combine with yesterday's. The morning crew would weigh out the meat for a batch and boil it up to defat and soften, then after draining we chopped it up and put it in with the tomatoes, tomato juice, beans, and spices and cook for hours in a double boiler. I think you get at least one patty in a cup, Wendy's chili is delicious and a great value!

    The first picture of the Wendy's was the Livingston Avenue location in CMH. I worked there in the late 70's. The Mainliner was on Broadway Street downtown. And yes, we used burgers that were 5mins over-time on the grill. We would take the patties and place them in a container under the grill. Gosh, the fries were wider and the meat hanged over the edges of the bun. Wish they would go back to the original way. Dave and Bob Evans used to meet at the Ohio State Fair and try to outbid each other for the prized cattle. Wendy's is quite different today.

    • @WeberIMayRoam
      @WeberIMayRoam 2 года назад

      @@buminbeer2 Calm down, sir. This is a Wendy's.
      Granted, it's been a while since I held the Square Spatula of Awesomeness, but once a patty was considered too well-done to sell as a burger, it was put into a pan in the Warming Drawer (not the fridge) above the grill. Once that pan was full, it was emptied into a food-safe bag, marked with weight and dated, and put into the freezer to drop it's temperature quickly, to ensure food safety.
      The next day, that meat would be thawed and boiled back to temperature, then drained and chopped, all the while the chili (minus meat) was cooking on the stove behind it. Once the meat was chopped and ready, it would be dumped into the chili and cooked for a good few hours before being served. This normally happened at 8am, before the store opened.
      At the end of the night, depending on how long the finished chili had been on the line, the full vat of chili would either be saved for the next day, or thrown out. (For instance, Monday afternoon chili could be served on Tuesday. But would be thrown out Tuesday night, if there was any left). So, yes, it would be thrown out "every day" if it were more than 18-24 hours old.

    The only thing incorrect about this video is that they said it's the same recipe from it's beginning in 1969. I worked for Wendy's in the 80's when they switched to the current recipe. The old recipe was okay, but the newer recipe was amazing. Also, yes, the recipe calls for, I believe was 10 LBS of "chili meat" which was overcooked or dried out hamburger patties. The grease was boiled out and after all the ingredients were added cooked for 6 hours in a double boiler. People may think it's gross to use old meat patties, but what's the difference between meat from yesterday versus meat you cooked today, other than being 24 hours older.

    Further proof Wendy's has the best burgers. They can serve them leftover and they're still loved. I'll have a double with cheese minus lettuce and tomato, and a large chili with that. Thank you

    My wendys sucks. When you get about half a hamburger patty in your chilli you tend to wonder what's really in your chili.

    In the late '80's I made the chili.... the meat came from burgers not sold or got scortched... boiled them and then chopped the beef up....

    Nothing at Wendy's taste like it did when Dave was alive. When he died his daughter, actually named Wendy, inherited the business but she sold it off as soon as she could taking the money and ran away leaving the business to begin its ever declining death spiral.

      I have to agree with nothing tastes like it did back in the 80's they have now. The meat itself is odd. The chicken used to be so much better and bigger. Even the Frosty is nothing like it was then. They used to bring back favorites at least but it looks like they stopped doing that now too.

    My grandmother used to get wendys chilli and baked potatoe almost 3 times a week.
    After she passed. I finally tried it. And its sooooo good! I buy it in a can at the store now! (Denver colorado markets)
    Ive also been to three chilli cook offs growing up. And wendys is my top 3 of all time. And the other 2 i have no clue who made it. And what the recipie was.
