  • Welcome Back Everyone! We are kicking off our Halloween Episode with the immensely delicious and powerful Zombie Cocktail. The Zombie cocktail was invented in 1934 by Don the Beachcomber and has gained quite the notoriety over the years due to its potency. It is a complete masterclass of a cocktail due to its perfect balance and the way you can taste every ingredient, despite the fact in has TEN ingredients.
Zombie(Smugglers Cove Adapted)(as seen in the video)
    3/4oz Lime Juice*
    1/4oz Grapefruit Juice*
    1/4oz Cinnamon Syrup(2:1)
    1/2oz Falernum(John D Taylor)
    1 tsp Grenadine
    1.5oz Puerto Rican Rum(Bacardi 8)
    1.5oz Jamaican Rum(Coruba)
    1oz Black Blended Overproof Rum(Hamilton 151)
    2 Dashes of Absinthe/Angostura Mixture(1 part Ango/1 part Absinthe)
    *all juices are fresh squeezed
Build recipe in a shaker tin ands fill with 6-10oz of crushed or pebble ice. Shake vigorously for 5-8 seconds or until the tin gets super cold on the outside. Pour unrestrained in to zombie or Napoli glass. Top with ice and garnish with a fresh mint sprig.
    1934 Zombie(Dons Version)
    3/4oz Lime Juice*
1/2oz Dons Mix(2 part Grapefruit Juice/1 part cinnamon syrup)
    1/2oz Falernum
    1.5oz Gold Puerto Rican Rum
1.5oz Gold Jamaican or Dark Jamaican Rum
    1oz 151 proof Demerara Rum
    1 Dash Angostura bitters
    6 drops of Pernod(or absinthe)
    1 tsp grenadine
    *fresh squeezed
Build recipe in a blender or a spindle mixer with 6oz crushed ice. Blend at high speed for no more than 5 seconds. Pour into a chimney glass. Add ice cubes to fill. Garnish with a mint sprig.
    Grenadine
Heat 1 cup of POM 100% Pomegranate juice in a small sauce pan over medium heat. Add 1 cup of sugar and whisk until sugar is dissolved. Let cool and bottle. Will last in fridge up to 2 weeks.
    Cinnamon Syrup
Heat 1 cup of water over high heat in saucepan and bring to boil.Add two cups of sugar and whisk until you can see the bottom of the pan and the syrup is clear. Then take 5 cinnamon sticks and break them into small pieces. Throw them into the syrup and keep the mixture over the heat for 30 more seconds while stirring. Then take off heat and lets the mixture sit(covered) for 12 hours or to desired level of cinnamon strength. Then strain into a bottle and refrigerate. It will stay good for a very long time since it is a 2:1 syrup and cinnamon is anti microbial. It will stay good for at least 4-6 months. It will be good way after but starts to lose flavor around 8 months but results vary.
*I like my cinnamon syrup to be a little stronger than normal so I can pickup notes of cinnamon in cocktails, otherwise you should just use regular syrup right? But do what you like. If you want your syrup less strong, just let the cinnamon steep for 6-8 hours. The strength of the syrup depends on how fresh and the quality of cinnamon sticks used. Also, the more pieces you break the cinnamon into, the more rapid and intense the infusion will be. It will take a little bit of experience and trial and error to make a cinnamon syrup that you are happy with.

The concept of being a zombie was somewhat different back then but sure enough you might forgett any other activities during that night if you have one of those.
