After many, MANY attempts at making Tornado Eggs, I finally figured out the secret:
To make the perfect Tornado Egg, temperature is KEY! The pan MUST be around 350F to start, and the eggs MUST gently “sizzle” and bubble when added to the pan.
You can use butter, but keep in mind the butter will brown (or burn) at the temperature you want to pan to be. If you like that taste, go for it! If you don’t, use clarified butter and/or a high temperature, neutral flavor cooking oil.
Once the eggs are added, the temperature will go down QUICKLY, so turn the heat UP!
Once the edges of the egg mass are set, SLOWLY bring the chopsticks toward the center and watch the swirls form. Then turn the chopsticks, and/or pan. (Watch RUclips videos for the technique.)
The speed of turning will depend on the temperature of the pan. A good way to judge how fast to turn is to watch the outer center of the egg mass to see the swirls form as you turn. If the swirls form too quickly, turn faster. If they form too slowly, turn slower. Raise, or lower heat, if necessary.
PRACTICE, PRACTICE, PRACTICE!
I've tried to make this twice without success. Did you put anything else in the eggs other than salt and pepper? In the video, I noticed milk was added.
@@mohanamohzan7636 Hi Mohan. As I said in my comment, Heat is KEY. It's NOT a simple thing to accomplish, and practice is the only way to perfect it. The other ingredients are just for taste, and the texture is only perfected by paying attention to the amount of heat. It's so hard to describe what the correct heat is, but you just have to practice. Too hot, and it will come together too quickly. Too little heat, and it will never come together. It took me a while to get it, but it WILL come! HEAT, HEAT, HEAT! Good luck!
@@tom2207 Thanks a lot for the tips Tom. Tried to make it again yesterday, still didn't get it right. Wonder how many times I have to do it before I get it right. I think I made the mistake of using only ONE egg, you need to use two at the very least.
@@mohanamohzan7636 Yes, Mohana. I use 2 Eggs in a PERFECTLY Clean 8" non-stick skillet. (a larger skillet requires more eggs). I preheat the pan with about 1/8-1/4" half oil and half butter. (The oil prevents the butter from browning at higher temperatures.). Then I make sure the Eggs sizzle as they hit the pan. (They MUST start out at Room Temperature for this to happen). After they are placed in the pan, I usually turn the heat UP to continue the cooking process while slowly turning the mixture with Chop Sticks. I vary the turning speed to produce the "Spiral" look. Too many eggs, and the mixture will be too thick to produce the "Spiral" look (the BOTTOM of the Eggs cook, while the TOPS are still a little runny). Too little eggs, and the mixture will be too thin, and quickly turn into a solid mass. Remember -- the ONLY way to produce the "Spiral" look is the right amount of Eggs, the right amount of Heat, and the right amount of Turning speed. I watched this guy's technique very closely and tried to duplicate it. I used TOO MUCH Heat, and watched what happened. Then, I dialed it back a bit. "Heat Management!" Good Luck! Keep going!
I want to try this technique! The outcome is so pretty and really eye catching. My one teeny tiny complaint is the two pieces of broccoli. A handful more on top of the gorgeous brown sauce would be great.

It is a Japanese egg dish made with Japanese recipes. It's a shame that many people mistakenly think it's a Korean egg dish. "Dress De Omu-Rice" means the drape of women's dresses, and it seems to express "rice wearing a dress". It originated in a restaurant called "BENITEI" in Saitama City, Japan. The only thing the Korean restaurant did was change the name to "Tornado".
