    I took a trick from Amy Maryon. Cook up zucchini, onions, green pepper, celery, whatever and puree it and freeze it in small amounts (1/2 cup or so). Then I put it in a large ziplock and take them out to add to casseroles, soups, etc. to add more veggies. Love that tip!

    Try Zucchini Lasagna. Here the Zucchini is absolutely the star ingredient. Basically all you are doing is substituting long thin flat zucchini slices instead of noodles. It's very healthy very KETO. And it was my go to recipe while I was doing keto. Lost over 100 lbs with that lifestyle and I loved it

    When we have a large zucchini, we cut in half lengthwise and scoop out the seeds. Then we cook ground beef, with garlic and onion and whatever seasoning we like and add fresh cut tomatoes into that or tomato sauce, then put that mixture in the zucchini, top with cheese and bake in the oven! It’s absolutely delicious! We also take zucchini slices and coat them with tempura batter and deep fry them! So delicious!

    I make what I call Italian stew. 2cans tomatoes, and “equal” amounts zucchini, yellow squash, peppers, onions, potatoes, two hot sausage links plus garlic thyme and maybe some broth. So yummy

    My great grandfather made sliced zuc sauteed with a bit of olive oil and a garlic clove crushed and then he added eggs scrambled together and he would serve it for lunch with a tomato sandwich 😊😊😊

    If you get stuck with some large zucchinis, you don't need to throw them out. They can be stored for at least six months or more, in a cool dry place, with air space around each zucchini, before they need processing. You can use them for the next year's seeds. Plus the large zucchinis can be used for all sorts of recipes as well!

    One trick for biscuits or pie crust that I absolutely LOVE is shredding butter with my cheese grater. The pieces turn out just the right size, and I don't have to cut the butter into the pastry. 😊

    I’ve made Zucchini Tots which are yummy! With shredded zucchini, bread crumbs, Parmesan cheese, Italian seasoning or just garlic powder, salt and pepper, some beaten egg to help bind together and form the Tots, cook in oven on baking sheet!

    Zucchini fritters with a side of tzatziki sauce. Also, the korean zucchini pancakes are good as well! Both are savory and use lots of zucchini!

    What I learned about growing zucchini: Only grow as much as I can use, 3-4 plants, lol! You’re doing a great job of using it creatively!

    Several years ago I started adding ground cloves, ginger and cardamom to my zucchini bread (in addition to the cinnamon.) it is now every persons favorite and I’m asked to make it for every gathering. If you get a chance to try it, I think you would like it. You’ve given me so many good ideas, I wanted to try and return the favor. -Natalie

    Just a thought. You might want to throw some chocolate in with that zucchini muffin mix and make chocolate zucchini bread or muffins. It’s super delicious that way also. The chef at a French restaurant Used to make it that way. He used to make chocolate zucchini bread and served it with his salads. It was amazing.
