    Sarah, with the really big ones, you can take a mandolin and slice them really thin, like a potato chip. Soak them in vinegar for a bit, once you remove them from the vinegar, sprinkle with salt and freeze dry. You have a crispy snack like a salt and vinegar potato chip. I also made a zucchini gratin for us once and he loved it.

    Opinions will vary, but best way to preserve zukes and summer squash that I have found is by turning them into burger-bun sized fritters (youtube has several recipe videos) and freezing them. I just use parchment separators in normal zip-lock freezer bags. They re-heat **very** well, almost to fresh out of the skillet condition, especially in an air-fryer. Great by themselves or as the meat in a "fritter burger".

    Sarah, I've used freshly shredded zucchini in meatballs for years. It makes them so moist and yummy. However I have to use crackers also otherwise they fall apart. I bet the freeze dried zucchini will absorb the extra moisture and bind the meat for you. 😊

    My fav recipe for zucchini is the zucchini soup that YT channel Rose Red Homestead makes. So I shred my zucchini and freeze in baggies the amt I need for 1 recipe of the soup. I’ll enjoy making it all winter! So good.

    Pork rind panko works the best for meatloaf or burger filler. I vacuum seal all my stored food , no freezer burn and lasts longer. Love your cooking episodes.

    For the past two years we have been slicing out zucchini and squash laying the slices out on a cookie sheet and freezing them. Once frozen I then place our serving size into a vacuum seal bag and vacuum away, sealing it twice ( for good measure). I’m in my freezer often and sometimes I break the seal. I have had people make comments about them becoming mushy once thawed, and yes that is true, however I’m frying them so they will have that texture anyway.

    I have used many of your preserving techniques; thank you for teaching us; you and Kevin are very good instructors ( I am a retired teacher and can appreciate your teaching techniques) I don't have huge crop of Zucchini, can always learn new ways of preserving and cooking squash.     Thanks for the different zucchini recipes I don't haveA freeze dryer. Sure they are rather fun to use. I I'm so glad you are doing A keto lifestyle. I have been moderate fat keto 3 years and never healthier. It's not just for weight loss I wish people knew that more. I have lost weight but mostly I am thrilled I have no more arthritis, No more fatty liver, No more depression... All because I Out the carbs. I will definitely give that garlic mash zucchini a try.     Great ideas! I’ve never had zoodles
    All of our plants went belly up! I’ve replanted so ours will be late but I’m wanting to freeze dry shredded and chips. Cuke chips too.
    I always add an OA to the vac sealed jars too.
    I have a quick tip: if you pre-freeze your food before putting it in the freeze dryer, it’s cuts a few hours of time off your total load. I reduce the extra freeze time too, if it’s prefrozen. I’m talking about 6 - 8 hours!! My freezer is running anyway. 😊

    I freeze zucchini boats, make the keto friendly mock apple crisp freezes great. I like to par boil strips and make a keto friendly filling and make like stuffed lasagna noodles. So many wonderful keto friendly meals.

    This has been one of my most favorite kitchen videos. You are so at home with all you kitchen gadgets and preservation methods. Years past I did more preserving. Now retired back into it. I also am trying to get better at my garden so I'll have vegetables to preserve. I hope for the day they design a freeze dryer that will be as good as yours but not as big or expensive!. Till then it is dehydrated, frozen or canned. I too am impressed with your keto success! Good job! 💜💙💚💛😎

    I quit steam blanching my zoodles, because raw they were more firm to begin with and the hot sauce blanched them to perfection.

    I usually take the to Kenny and I like the smaller ones better and chop them up coarsely and put them in the freezer that way when I make spaghetti I have them for my spaghetti, or for my vegetable soup, or goulash

    Sarah, you can grind the shredded freeze dried zucchini. Use the powder as bread crumbs.

    We found after trying zucchini noodles in spaghetti, that we preferred thin chunks better. I wish you had kept seed and carried on the heritage of that crossed Jalapeño and Bell pepper that you had show up in your pepper plants one year. You found a crossed Big pepper that was hot like your Jalapeño peppers and said it must have crossed the two. That was so interesting! Imagine! A big hot pepper! I wish you had kept seed and experimented more with it!

    Another great video. Zucchini is so versatile. I've used lean meat and quick oats in meatballs, never the milk and breadcrumbs. I could never understand taking dried bread, soaking it in milk, then squeezing out the milk? All to get the right moisture content? Too puttsy for me. The Zucchini seems like the perfect solution for this! 💜

    When you find yourself with giant zucchini, try one of these two things:
    1) Treat them like acorn squash. Cut them in half, scoop out the seeds, and stuff them with whatever you would stuff an acorn squash (e.g. grains, herbs, and maybe craisins). Bake and enjoy!
    2) Make an apple pie, only with the zucchini instead of apples. No, really, it's great! But of course, scoop the seeds and peel the squash.

    Google zucchini bites . . . there are a variety of recipes, basically kind of like a baby quiche. You mix the shredded zucchini with eggs, and whatever else (onion powder, or onions, garlic powder, crumbled bacon, cheese, etc.) and put in little muffin pans. The 'bites' can be frozen, and they make a super tasty snack or side dish - and they are keto.

    My Keto sub for bread crumbs has been crushed fried pork rinds. I like it on fish. I dip the fish in almond flour, then in a beaten raw egg, then cover with the fried pork rind crumbs and fry in coconut oil. Yummy! I am interested in zucchini pasta! I'm down 30 pounds in four months so far. Keto works for me too. Also, here is my dutch chocolate ice cream recipe. In a Rubbermaid 5 cup container with lid, pour in 32 ounces of heavy whipping cream, 4T Ghirardelli 100% cocoa dutch-process powder, 7T of monk fruit powder (I have recently switched to a monk fruit/allulose blend, and it makes it a bit softer to scoop out), 4 teaspoons of vanilla extract, a cup of chopped almonds or pecans (optional). Put the lid on and shake well or use a hand blender or whisk for a few minutes. Freeze several hours until set.

    I use them raw and fresh in a salad. Slice very thinly lengthways, i use my potato peeler. Add a little oil/ lemon dressing with lemon zest. Enjoy

    I'm going to have to dig up my mom's zucchini bread recipe now! She would shred most of our zucchini and freeze it. After a few weeks there would be so much that several people would find a random zucchini or 3 on their porches 🤣

      Have you tried zucchini flour? I freeze dry then blend in my VitaMix blender until very fine. I replace part of my wheat flour in recipes.

    Meatloaf, meatballs etc do not need anything as a binder. If that were true then the simple patty would need them.
    The truth is, bread oatmeal etc were originally put into those items in order to stretch what meat was available.
    Think of the bread crumbs as a filler not binder.
    As people vary the recipes and add more wet items to ground meat they added more dry ingredients to soak up the moisture. Simply stop adding so many wet ingredients to the mixture, save those for a sauce to pour over after you've cooked the meatballs or loaf

    Shredded zucchini, freeze-dried or frozen, can also be put into hearty tomato dishes, spaghetti, or other hearty sauces etc. It practically disappears and bulks up the dish adding veggies.

    I also follow the keto lifestyle and I like to melt butter and Lakanto brown sugar in a saucepan and add diced zucchini and use them as an apple substitute in my keto desserts. I am no longer a diabetic from eating this way and this is a delicious change for sugary desserts

      Plus I use an apple extract from Olive Nation, make a dutch crumb keto/paleo approved topping & bake up a wonderful 'apple' cobbler.
      Hard to tell the difference!!

    You can add the freeze dried zuchini to any type of soup or sauce. It basically just disappears in there but you get the added nutrition and thickening.

    In the UK we call them courgettes and when they grow to the giant size they are then called Marrow which we stuff with mincemeat onions and whatever vegetables you want then wrap in aluminium foil and bake cut into thick slices and serve with buttered mash potato and veggies and beef gravy lovely comfort food xx love your videos you look amazing you are very pretty and you suit contacts really well xx

      You can make "marrow rum" too! I've never done it myself, but there are plenty of recipes on line and it sounds good to me!

    I always place a small square of plastic wrap directly on top of the food before placing on the lid. I find it helps keep frost from forming on top. I do the same with ice cream once it's opened.

      @@vgil1278 no! That's even better!! I try to use as little plastic as possible but frost free food is more important to me. I'm ditching the plastic and using parchment! Thanks for the tip!

    I think I’ll try shredding and dehydrating my zucchini as an alternative to freeze drying as I don’t have one and I know it won’t last as long but it’s what I have! 😊That stewed zucchini with garlic and butter looks amazing I have to try that one!

    Zucchini and summer squash are very versatile - (1) blanch and freeze dry, (2) blanch and fresh freeze, (3) serve fresh (salad), (4) cooked/baked zucchini, (5) pickled or brined sweet-sour zucchini pickles mix -
    (1) zucchini noodles, (2) mandolin long and wide zucchini lasagna, (3) mandolin diagonal rattatouille slices, (4) mandolin fresh salad zucchini toothpicks, (5) cook up straight or crinkle cut zucchini slices, (6) batter and deep fry or cook zucchini (garlic) french fries, toothpicks, hashbrowns, deep-fried slices, (7) Fresh and blender zucchini (or freeze dry and blender powder) for a soup and/or stew stock ingredient.
    Zucchini and summer squash can also be made into a blender product as a salad dressing - with oil or mayonnaise, dash of lemon juice, some fresh salad herbs mix, salt, pepper to taste.

    I would love to see a follow-up video of how the zoodles cook up from the freezer. I've frozen shredded zucchini before and it seemed rather mushy when I defrosted it. I don't believe I blanched it first cuz I wanted to use it for bread. Should I have blanched it for bread making? I had never heard of steam blanching before. Can it be used with other veggies, like green beans, that I want to freeze?

    I love the idea of using freeze dried zucchini in a wonderful fresh zucchini soup anytime I want. 😁 Here is the recipe for this amazing KETO friendly soup. 1/2 C chopped onion 1 1/2 lb. fresh zucchini, unpeeled & sliced (I'd use the shredded freeze dried if no fresh available) 1/2 tsp nutmeg 1 tsp seasoned salt 1/2 tsp tabasco sauce 2 Tbsp butter 2 1/2 C chicken broth 1/4 tsp basil freshly group black pepper to taste 1 C half & half (I use heavy cream to make low carb and even more delicious) Sauté onions in butter, add zucchini, chicken broth, basil, salt, and both peppers. Cover & simmer for 15 mins or until zucchini is well done. turn into blender or food processer in at least 2 batches & process until pureed. Return to saucepan and add cream, blending well. If serving cold, store in covered container in container in refrigerator for several hrs or overnight. (can be served hot, my preference) Makes about 6 servings. My whole family LOVES this soup. Try it, you will love it.

    I got the Freeze Fresh book from your Amazon store and LOVE it. It was filled with great tips, but was presented in a different way than most cookbooks. It has so many different ways to use each item to be frozen with great sounding recipes and advice.I read through it and bent down the pages I want to try first. (It's filled with bent down pages now!)

    #1 What is your favorite recipe with the garlic butter zucchini cubes? #2 I've used the zoodles, they are great! #3 I've shredded and use mostly for zucchini bread. Have you shredded and dehydrated? If so does it work?

    Adding a bit of finely, shredded zucchini (or carrots) to meatloaf makes it very moist. No one knows it's in there if you have a picky little eaters. LOL I don't measure, but a couple tablespoons in 2 lbs of meat is a guess. Below is a thing I pieced together yrs ago ...again I don't measure. Prepare meat as you desire. Form into a round loaf
    Taking it up a notch: Preheat a large skillet (leaving around 2 inches around the meat): Prepare sliced onions & can of of stewed tomatoes. Topping: MIX 1/3 cup Ketchup & dab of brown sugar (or even syrup) as a topping. Sear 1st side. Flip. Add onions, tomatoes around the meat. spread out topping & place in oven. Bake 375 until meat is done to your preference. I prefer well done. Hence the effort to seal in the moisture. Try it, gets rave reviews.

    zucchini relish is an excellent way to use the “beached whale” giants you missed. the firmer flesh and rind stand up to the processing better than the tender ones. Garden Way’s New Zucchini Cookbook by Nancy Ralston and Mary or Jordan is an excellent resource.

    do you find blanching the zoodles helps with the texture after you thaw them? I haven't been super happy with the soggy texture of thawed out zoodles.

    When you sealed your zucchini in the Mylar bags, did you just seal the bags? Or did you suck out the air and also seal the bags- ❤ thanks
