    Becky to the rescue!!! I am doing a pantry challenge to stay out of the grocery store. I made zucchini chicken kale ricotta pasta skillet. I had raw milk and veggies. I'm harvesting onions wave 1 right now. I dehydrated the onion tops. Wave 2 will be pesto!!!!

      Actually got you in time this post just want to say I love your channel sometimes I'm up all night watching you. I don't sleep that good, I told my husband we should start canning our stuff out of the garden, we don't have any it's full of beautiful flowers and plants, you should have seen the look on his face. I had to own up and tell him the truth, I was only kidding. He's nearly sixty five and I've just hit sixty plus The garden we have is beautiful you have a little road outside then the sea. But I wished I found your channel Thirty years ago that would have been great doing what you do. I honestly think it looks like you have been doing this all your life and by the way I know you were far to young to have been doing this when I was younger.       @ketokhuleesi4451 I made homemade ricotta first then used it in the pasta recipe. So yes, 2 recipes for 1 dish.

    I made my own sun dried tomatoes with a bunch of large cherry tomatoes from my garden. I just sliced them in half and filled my dehydrator trays with them. Dried for about 18 hours-ish, left them a bit squishy and then blitzed them in my food processor with olive oil and then froze in ice cube trays then bagged them up. So good!

    Just finished an epic pesto weekend myself! 42 jars of basil, 16 of garlic scape and 14 of parsley PLUS a few of garlic scape and parsley together, which is SO GOOD! I had never done parsley pesto before ..its my new favorite! Who knew? I use pesto in just about all my winter dishes so am so glad to have a two year supply! Try it, you will like it!

    Loved all the pestos! I was really surprised you discarded the oil from the sun dried tomatoes- it is lovely olive oil with so much flavour in it!! When I open a jar I always use the oil to cook with, it’s like liquid gold and it would’ve given your pesto even more delicious flavour! (Use that oil not only in your pesto but also to cook your chicken and vegetables!)

      I thought so too but she maybe didnt want to use it since commercially processed item vs an oil that she chose for her own use

      It really depends on the brand of sun dried tomatoes. Some used cheap oil and it really needs to be tossed. I have learned that it is vital to always read the labels. Even brands I have used in the past have changed ingredients.

    Thank you, Becky! A friend uses muffin tins to freeze garlic scape pesto, pops them out/into a freezer bag to grab and throw into individual pasta dishes, stir fries etc. I thought it was genius, so passing along.

      I freeze mine flat in lg freezer bags and just break off chunks when needed. I also do not use cheese or nuts. I make ‘pesto’ with each kind of herb I grow in the garden with the herb, salt, lemon juice to preserve the colour, and olive oil. This makes it much more versatile and I can use the herb flavours in more recipes.

    Grew up with my mom's homemade pasta so this video reminded me of that. She usually rolled it out by hand but sometimes used a manual pasta roller. PS: thanks for always including closed captioning I really appreciate it as someone who is extremely hard of hearing almost legally deaf. They don't always work out but I know what you're talking about even if YT's automated CC said a little pepper never fruit anyone instead of never hurt anyone lol

      I always read cc even if I’m in a place where I can hear. Television has been infuriating for years with sounds blasting and speech you can only hear if you are Superman or a vampire 🤨. And cc is sometimes hilarious.

    If you aren’t a huge fan of the texture of pesto but love the taste get a NutriBullet decrease the oil and add some hot water till its a texture you like and its a smooth creamy sauce and freezes really well :)

    Tip: Rubbing alcohol on a cotton ball or paper towel will take permanent marker off of your used jar lids so you can relabel them. It will also take the factory “use by” dates off if you reuse glass condiment jars too. Mayo., pickles, etc. I keep a bottle of rubbing alcohol in my kitchen just for that. 👍🏻

    Last time I had a recipe that calls for pinenuts, we used sunflower seeds. It was a feta cheese, stuffed banana pepper, and it called for pinenuts on top. It was absolutely delicious with the sunflower seeds.

    I discovered if you take a whiteboard marker and scribble all over the permanent marker on your lids it comes off super easy. That way you can relabel your lids. Works brilliantly on my glass jars that I use for all my baking supplies. I add used by dates each time I refill my jars xxx

    Hi Becky 🙂 Greetings from Poland 🇵🇱 Thanks to you I fell in love with the onion top pesto. At this point I have about 20 jars of it in my freezer. You have inspired me to start gardening and this year I have an abundance of spring onions which I use for the recipe. I added my own twist to it and I absolutely love the flavour. I even shared the idea (and a bucket of the spring onion tops) with my friends who own a restaurant so that they can enjoy it as well. Also, I shared a recipe for cucumber kimchi (I thought you might be in cucumber season at this point) under one of your previous videos - don't know if You saw it but I really hope you'll try it out.     Hi Becky, you can use isopropyl alcohol/ rubbing alcohol to wipe off the sharpie on the jar lids.

      Everclear works too. My son works at a liquor store and I've had a couple half gallons around the house for cleaning, etc., in a spray bottle mixed 1/2 and 1/2 with water. I spritz the sink right after cleaning it while it's still warm from hot water. It makes it really shiny.

    Knowing how much you like to make things from scratch, I just wanted to let you know that Rose Red Homestead (Pam & Jim) have a video on their channel of making “sun dried” tomatoes with dehydrated tomatoes. I use it with my dehydrated homegrown grape/cherry tomatoes, and they turn out great.
    12:58 Have you tried adding some lemon basil to pesto yet? It seems like it would be really nice. It’s on my to do list. =)

    I recently made my second round of basil pesto for this season. I preserve mine by refrigerating it for a couple hours to “set up” a little and then I make ice cream scoops of it on a baking sheet and freeze it. Once frozen, I store in a plastic storage bag. The large ice cream scoop is the perfect size for most meals and storage takes up less room than jars.

    I’m in eastern NC. I’ve been making pesto for years and freezing it during the summer. The running joke is that I use “whatever nuts I have in the freezer”. This year all my pesto is made with pecans as I wound up with 25 pounds of shelled pecans last fall from my trees. I’ve used pine nuts,walnuts, almonds and pecans. The texture is slightly different with each nut. I portion 1/2 cup into vacuum sealer bags and press flat in freezer. Stores in very little space.

    Well that was 40 minutes of viewing pleasure! I really enjoyed your video and the making of pasta. I’m prolly too lazy to ever do that (perhaps when I was younger I would have), but last night I made basil pesto and put in the freezer. Never made it before and never eaten it either so it’s about time. I was looking for a way to prepare a pasta/pesto dish and this looks incredible. And I wanted to use some of my ripe tomatoes so this kinda nailed it for me! Thank you.

    I wanted to tell you that yesterday I used some of the Sundried Tomato Pesto you made here (that I had frozen from last years basil harvest). I used it on a small Naan bread and then added cooked chicken and mozzarella cheese. Cooked it in the oven and it made the most amazing personal pizza for my lunch. Wow! I will be doing that again. Thank you! Also I’ve made the pasta dish you put together here (but didn’t make my own pasta) many times since this video. It is my favorite meal I now make a lot. I love basil pesto. But I really LOVE the Sundried tomato basil. I’m yet to try the onion top pesto as I’m not sure when to harvest the onion tops. It’s my first year growing onions and wasn’t sure if it hurts the onions growth if you harvest the tops before you harvest the onions.

    I just made the sun dried tomato basil and it is SO good!! I used walnuts and as suggested by someone’s comment I also used the oil that the sundried tomatoes were packed in. SO GOOD!!! THANK YOU BECKY!

    You inspired me to look up a nut free recipe and will be ordering sunflower seeds that are packed in a nut free facility. This is my first year growing basil so next year will grow way more. This year I planted by tomatoes and asparagus to help with pest control.

    I was just telling my mom I wanted to make home made pasta and wanted a kitchen aid pasta maker. So keeping my eye out on market place for one. I’ve been inspired to make it ever since I watched you make it at your old house and laid it all out on your dining room table and extra table to dry. I’m 56 yrs old but I have learned so much from you. I even found a set of those wooden spatulas you cook with on Temu and immediately got them as as they made cooking look so easy the way you use them…. Thanks for inspiring this older lady!!

    Yes! You have inspired me to make homemade pasta!!!! I’m almost embarrassed to admit that I’ve had one of those manual crank style pasta makers for at least 20 + years and have never used it🙄 I do have a KitchenAid mixer, so if I like making pasta I will get the attachment!!!     Love these variations of pesto and can’t wait to try the sun dried tomato version!!! Basil pesto is one of my absolute favorite dishes!!! Love basil so much!! I make big batches also and freeze them in silicone ice trays, so I can take out exactly what I need each time. Finally I place the cubes of pesto in a large ziplock bag and keep in the freezer.
    I reuse my lids too and keep a bottle of isopropyl alcohol in my kitchen to wipe the previous food labeling off. Just a dab on a paper towel takes the ink right off.

    I am from Buenos Aires. Sunday is an establish day for pasta. Mi mom made ravioli, noccies and spaguetti. We are Italian descendents. I do make pesto. Basil, walnuts ( i don't like it with pine nuts). Garlic, parmesan and olive oil.I live 49 years in USA. I live in Pslm Springs CA.

    Becky, and I just learned a valuable piece of information from you. I did not know that you shouldn’t move chicken around in a pan until it’s brown and then it will release. I could never figure out why it always stuck to the pan, game changer. Thanks!

    So jealous!!! No humidity...less disease...we WILL definitely be trying the sundried tomato pesto. I would LOVE to see how you sun dry your tomatoes since humidity is less there. I'm always learning from you. Thank you Becky. Temp outside is 89°F yet feels like 100. Got to love humidity.

    Loved watching you make this meal from scratch and pull it together using so many things you grew! Your zucchini baking vlog kept me company yesterday as I pitted canned and made jam with a bunch of cherries. You always inspire me with your ability to multi task in the kitchen.

    That Looks Perfecto Becky! You work too hard. I love it when you can make a dish that is homemade like that. I'm busy working in the garden too so I had to watch this is 15 minute increments. I have never made pasta and I don't see myself doing it this time of year when my kitchen is consumed with fresh produce from the garden. Preserving all the goodies right now. Josh is a lucky man having a wife that can spend all day making a great dish like that.
