Turn off all internal burners and close the lid to smother the fire. Open the lid after about 20 seconds and let the smoke billow out (anything salvageable will survive this step…anything that doesn’t was already gone). Go in the house, find a mirror, and look at a failure. Only in that order will you find future success.
Happened to my inlaws, we did all the steps you listed but it took a few minutes cause the fire was getting air from the bottom grease trap holes and it was a windy day. Ended fine in the end but took a lot longer since it wasn’t a good seal

Had this happen a couple times . turn everything off, close valve on propane tank. Get the hose and stand far back. Douse flames, slow at first with thumb over hose to get a gentle broad spray with water. It will put the flames out.
I do this on purpose all the time, haha. It really improves the taste of your steaks. If you keep a big bag of salt nearby, putting out these fires is really easy. Also, I used to be a chef, so I'm very comfortable handling these situations.

Gas grills are a pain in the ass. You have to clean them, my mothers is lined with heavy foil. Every 3rd use, I slide the tray out the back, replace the foil and no more grease build up.
