Swee in,jati is 100% pure rice,u also can use rice to blend。 Actually this recipe is qq texture,if you want more qq, then you can replace 10g corn flour with tapioca flour.
I read some of ur past comment, to have firmer texture use 100% pure rice flour means not the elephant brand that one? Then still need to still add in wheat starch? 10% water lesser also rgt? Bcuz i use elephant brand rice flour then wheat starch and tapioca flour instead of corn flour.. is this recipe ok?
DeJie , Thanks for sharing this recipe. I love Teochew steam rice cake very much. I prefer a bit more chewy & firmer texture. I tried to fry it., but as I stir fry, it gets into big lump. Please advice how to get chewy & firmer texture like those Hawkers are selling. Hope to get your reply soon,thank you.
Hi Wong, if you want to use for fried, you need to use 100% pure rice to get chewy & firmer texture. either your use rice to blend or buy the 100% pure rice flour and don't add the 10g corn flour and reduce 10% of water.

you can add some tropiaca flour/wheat starch to make it become qq.
That means add another 10g of wheat starch?
