Here's my quick and easy way to make Vegan Mac & Cheese 2 Ways! Tradtional American and like Cacio e Pepe! Hat tip to @JKenjiLopezAlt for the method and @BrianLagerstrom for the inspiration on the Cacio e Pepe style.

The "Cashew e pepe" is really similar to how I've been making an alfredo-like sauce. The only differences is I just soak the cashews in the blender with some oat milk for 10 minutes, then blend it (probably needs to be a high speed one) with butter and some raw garlic. After that I add the seasonings and it's awesome so I'm sure yours is too!
Yeah they are quite similar I'd say! I never had Cacio e Pepe and didn't eat a ton of Alfredo before going vegan so I can't really comment on how close they are, but they are super delicious on their own so who cares lol.
@@TheeBurgerDude I definitely liked my alfredo before (and now). I think it does a really good job if you include enough butter... Adding cajun seasoning and using the Daring cajun chicken makes an amazing pasta too!
Yeeaah. Cream and pepper. J Kenji Lopez. I veganized his biscuits and sausage gravy recipe cashew cream and beyond sausage and it was INSANE.
The cashew one still looks really good but I would probably add Turmeric for colour, and maybe even Dijon Mustard for both colour and taste.

I just made this recipe (and I’m currently chowing down on it). You were right, it is definitely a little dry, but I didn’t add any more sauce to it because I was lazy 🤷🏻♀️
I also had to add more spices, like you mentioned, but it still tasted a little bland so I had to add a ton of salt and a little garlic powder.
I also couldn’t find the exact mushroom seasoning either, so I just got one that had some added stuff to it (such as some citrus, so I didn’t add any extra to the sauce)
Also, the milk that I used was unsweetened almond and coconut, since I couldn’t find regular unsweetened, but I thought the coconut added a nice taste 👍🏻

you can always get whole peppercorns, toast them a little bit before adding the pasta and then grinding them. the pepper flavor should be stronger
Love this technique! Frankie Calenza (from the RUclips channel- Struggle Meals) does this technique and he calls it a Pasta Risotto (or Pasotto”)... I like doing everything in one pot sometimes! Omg both recipes look perfect & easy. I'm obsessed with Sweet Earth frozen cauliflower mac (I'm lazy) but I'm gonna make mac & gary soon. Gary is the word for vegan cheese, or else I might be insane. I don't remember where I got that idea.

The first method, i actually do this! The difference is I use nutritional yeast and salt. I will probably add other seasonings shown from this video.
I made this last night and it was incredible!! I made the classic version. Super easy too. Definitely season it up a bit, I added garlic powder, pepper, salt, a dash of Cholula hot sauce and about a tsp of white Miso paste. Definitely a game changer and a keeper! Thank you!

Frank's hot sauce is fine, but try some Cholula!
If you want a strong cheesy taste in your cashew sauce, try adding a bit of nattō (Japanese sticky fermented soybeans) !

Yes it’s much more sour so I would use less.

I know this is an older video but I needed to comment. My non-vegan daughter and daughter in law ask me to make this for them. I always do. Happily. I also just made it with impossible meat and peas and they scarfed it down!

You mean the store bought stuff? Typically just cashews or coconut oil for the fat, then starches and seasonings.
