For the marinade 1/4 cup of mushroom seasoning 4 tsp coriander and cumin 1 tbs cinnamon 12 tbs of chipotle in adobo (3/4 cup) 12 cloves of garlic Juice of 2 limes 2 cups of vegan chicken stock or vegi stock
I used to work at chipotle. The rice has lime juice. The citrus with the sugar is what adds so much flavor (and calories) and when it's cooked they use laurel and a heap of soy bean oil.
Their sofritas bowl is hands down my favorite fast food meal, especially when adding the fajita veggies (wasn’t the same when Covid created a shortage). So glad I have a great recipe for it, because their union busting has me avoiding them hard.
THIS LOOKS AMAZING! Btw, I started using a cheap rice cooker I've had for years to re-hydrate my TVP, and no squeezing needed! You just need enough liquid for the TVP to float, plus spices, etc!
So many good ideas here! Definitely trying the beans soon. One random idea is I used to love the veggie patties at Subway before I found out they weren't vegan. Maybe there's a superior way to make that?
@@genehayes Oh awesome, good to know! Maybe one of these days I'll try out subway again. I still think having a way to make them at home would be super cool though.
@@genehayes It actually varies based on the country you're in. They're vegan in the UK but not in the US. I don't know about other countries besides those two
@@genehayes I'm sorry. I actually just ran into this issue the other day when trying to Google ingredients for Subway's new menu. I got so excited about all the vegan options! But then realized the menu was the UK one :'(
I just made this bowl tonight and man o man was it tasty! For a quick weeknight meal, you can't beat soy curls. Can't wait to try your carne asada torta recipe next 👍
i've been sleeping hard on soy curls. i just found out you can buy a 12 lb. bag of them direct from Butler Foods for like, 75 bucks including shipping. nice!
This might be a really bad explanation but I am going to try my best to help, so bare with me... If you want to roll a tight burrito that won't fall apart, start by folding in the two sides and hold one of your fingers on those sides that you just folded in to keep it tight then take one of the big sides while still holding the little side parts down and squeeze that really tight and tuck that one side in as much as possible over and push it as much as possible under the food. While holding it all in and really tucking it in as tight as possible, then roll it slowly the rest of the way while holding it super tight. Continuously, while you roll it, squeeze that side tight under the food slowly as you roll it up. Keep pushing it in under the food with every little bit rolled and keep tightening it as you roll. Don't try to do it fast. Just slowly squeeze, push it under the food and roll and that should be perfect. I hope that helped. :)
In January my wife and I do what’s called the Daniel Fast. Basically Daniel didn’t eat any meat and chipotle is what kept me going and made me realize I could get by without meat. Although I went back to eating meat I can see the merits of veganism.
I've been doing a lot lazier version of this. I'm stoked to spice it up with some of these items, that corn looks dank and the adobo sauce in the curls is something I haven't thought about. Thanks 🤙
Do you have a panini press? They (usually) come with adjustable "levels" (I guess you could say) that will only lower the top hatch to a pre-set height. We make homemade burritos with our press (that we actually found in a yard sale for, like, $2!) all the time. With it, we can get the burritos nice and toasty without squishing the ingredients out of the tortillas.
Nice! I usually just do a pan. Not worried about squishing stuff, but heating up stuff like the corn salsa and pico de gallo. Like I said, I think this might be better grilled with just the hot stuff and then adding salsas to each bite and getting a different kind of flavor each time! I should've made another but I was full lol.
This is a great recipe! I especially like that it is vegan. I cook all vegan so I’m always looking for more recipes like this. I make cooking videos too. I’d love to learn more from each other!! Never stop learning and growing!

I like the look of your sour cream. Gonna give it a shot. Great looking meal. I prefer to make most of my stuff, so cheese has been off the dishes unless it is a sauce like nacho cheese that I can make.
✅ also definitely want to get your book. I’m traveling around the country in a van and trailer spreading veganism, but don’t know where I can get it delivered to me. I should be in Florida sometime in October and will stay for the winter. I will buy the book then.. I’m really excited, you’re recipes are really practical and likable. Comfort foods. Wish I could try it right now.
Great video, as always! I've been really wanting to try out soy curls but haven't found it anywhere where I'm located. I'm a sucker for some queso on burritos.
Looks a lot better than only getting the vegan options at chipotle. There used to be a place called Free Birds and their vegan options were a bit better than chipotle but they went out of business.
Can it be that food in America is rather cheap? In most European countries, meals like this would be impossible to make if you're not rich. That stuff would be a special dish which you only make once a week lol
Beans and rice and TVP are incredibly cheap everywhere. What would be expensive besides the daring chicken and avocados? Those are the only things that are costly here and they aren't necessary for the dish.
@@ben1147 I did, but still lol. Do this for a whole family and you've got nothing left. There are so many different ingredients in this burrito. Have you had any success in making patties out of the daring like you have the gardein scapollini?
Daring doesn't have patties and they don't get mushy like the gardein when you thaw them, so no, but if they made a patty that would be amazing!
