I’ve been cooking for ever and there’s always some sort of adjustment that can be made to recipes and or things to change to your own taste, but this one, I’ll always gonna follow it to a T religiously 😂. Well I finally made these last week and they are literally, hands-down, the best bar I've ever had. I stored them in a glass container and the bits that were left over on the bottom I dumped on top of my yogurt. I will be making another batch tomorrow for my meal prep!
I made them tonight! I tweeked them for our families allergy/dietary needs: sugar free and w/o the nut butter! they were still amazing and chewy and wonderful! Thank you!
Can I just say WOW?!?! Yesterday I went in search of puffed rice to make these today. After 3 stores I finally snagged a bag. My efforts were not in vain. These are amazing and I would easily meal prep these every Sunday! The only problem I have is that I seriously don’t think they will last me the whole week 😋
I’ve made these twice so far, and they are excellent! I followed the recipe exactly but made one minor amendment: I oven roasted my pecans before chopping them. Roasted pecans taste heavenly and I enjoy eating them more, as opposed to raw pecans. I baked some for my boyfriend and then baked another batch for myself. These are perfectly delicious, with a perfect mixture of sweet and salty, crunchy and soft. Thank you so very much, Lisa! 🙏🏽💞 This will be my forever go to granola recipe.

I am excited to try these. I am tired of eating packaged granola bars, nutrition bars, protein bars and fig bars and then putting the individual wrapper into the garbage for the landfill. I have been wanting to find some recipes like this so that I can avoid all that packaging and also all the garbage ingredients that are in so many of the packaged nutrition bars. I am also going to share this recipe with some of my friends and coworkers that have also gotten into working out and go through a lot of those packaged bars. Hello Lisa. I just made these today & they are pretty good. Healthy big time. The only failure is that when cutting them, they started to fall apart a little and started crumbling. I made these today and was very impressed with this recipe. It's perfect and full of flavor. Once baked and cooled I got very clean cuts. My trick to that was using parchment on top of the unbaked mixture and used a duplicate pan to compress it , then removed the parchment and baked as usual. I'll be making these from now on and will never buy overpriced, store bought bars again especially since I always have these ingredients in my pantry.
I only have a toaster oven at the moment, so I am going to try making it and baking as much at a time as will fit into the small pan I have. It really looks good!

These bars are fantastic! I did decrease the the honey and chocolate chips and increased the nut butter since I try to avoid added sugar. Do you think they would fall apart if I eliminated the honey completely? Thank you for all the great recipes 😊

I was looking for some healthy sweet recipes to make for my young grandsons, what with their mom chiding me for baking regular cakes and brownies etc., which they love BTW. But I do agree with her that we need to inculcate healthy eating habits while children are still young. Until I saw this video by chance I wasn’t confident of a healthy yet tasty sweet which would appeal to adults and kids both. Now I am hopeful. If you use rolled oats, I suggest to pulse them to a finer texture in a food processor. The texture of quick cooking oats will help with the softer and chewier texture.

I've been looking for a good granola recipe that doesn't have a million ingredients in it and now I've found one... The only I'll add will be some dry fruit, but it looks delicious and easy to make 😊
325 degree oven. 2 cups quick cooking oats, 1 cup puffed rice (not rice crispies), 1/2 cup chopped nuts (pecans/almonds) 3/4 c whole nuts; 1/2 c mini choc chips; 1/4 cup flax seed or chia seed, 1/4 tsp kosher salt; ; 1/3 cup drippy almond butter; 1/2 c honey, 1/4 melted coconut oil; 2 tsp vanilla extract. Combine wet w/ dry. put in parchment pan, flatten/smash down with back of spoon and parchment - bake 20-25 mins (chewy) or 25-30 mins (crunchy) look for light golden color; cool then fridge for 1 hour to solidify; then remove and cut up.

I've had success with replacing fats like butter and oils with low fat greek yogurt in cookie and brownie recipes for lower calories, I might give it a try with these today! If I do I'll let you know how they turn out

I used avocado oil its super light and I seem to be allergic to coconut oil

Hi Lisa. You specifically say to use quick oats not rolled oats, What effect would using rolled oats have?
Rolled oats will give it a chunkier, oaty texture. When the ingredients are are more refined, it will give a better chewy texture.
