- Focaccia is a type of Italian bread that is soft, fluffy, and full of flavor. There are many variations of focaccia, but in this video, I will show you how to make the Barese focaccia, which is a specialty from the city of Bari in southern Italy. This focaccia is topped with cherry tomatoes, olives, peeled tomatoes, oregano, and salt, and it has a crispy crust and a moist crumb. Why choose between focaccia and pizza when you can have a focaccia pizza!
To make this Barese focaccia, you will need the following ingredients:
For the dough:
• All-purpose flour - 2 ¼ cups (300 grams)
• Semolina - 1 cup (200 grams)
• One big potato (about 5 oz. / 150 grams)
• Warm water - 1 ¼ cup (300 milliliters)
• Sugar - 1 tsp.
• Dry active yeast - 2 tsp. (7 grams)
• Olive oil - 2 tbsp. plus more for greasing
• Salt - ½ tsp. plus more for sprinkling
For the topping:
• Cherry tomatoes - 1 cup (150 grams)
• Olives - ⅓ cup (80 grams)
• Peeled tomatoes - 5 pieces
• Oregano
Follow the steps and that's it! You have made your own Barese focaccia in less than two hours.
You can enjoy this focaccia as a snack, as a side dish, or as a main course with some cheese or salami.

Yummy..deffo gonna make that but with real kalamata olives not those fake ones blackened with soot - yeah I'm not kidding - stay away from those.
