  • FOCACCIA
    Potato Dough:
    2 medium Idaho Potatoes (about 8 oz)
    6 cups Bread Flour or Unbleached All Purpose Flour
    2½ tsp Salt
    3 cups tepid Water
    3 Tbsp Olive Oil
    2 tsp Active Dry Yeast
    Use Olive Oil to grease baking pan (18”x13”x1”)
    Toppings:
    3-4 tsp dry Oregano
    ¼ cup Extra Virgin Olive Oil
    ½ cup Sun Dried Tomatoes
    ¾ - 1 cup pitted Olive (oil cured olives)
    Sprinkle Kosher or Coarse Salt on top
    Drizzle on top with Extra Virgin Olive Oil

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera and behind the scenes?
    Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
    Does Gina read the comments?
    We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    Gina, I'm so grateful for your channel for 2 reasons. One mostly for my mother who is 84 and watches your show and it keeps her company through this pandemic. We sometimes sit together and watch you, and talk about how much we love everything you make! I watch you as well on my own you make me smile, I love your spirit and your sweet gentile kindness comes through in every show. I especially love when you sing, it reminds me of my father who passed away. He loved to sing every chance he had. Thank you so much and your are doing a wonderful job.     BEST cooking video I've ever watched. It's like being with your mother in her kitchen. She's not trying to make a video... she's just sharing her world. The love that she puts into her focaccia is Hallelujah! I don't care how long the video is... 26 minutes... I want to be in her kitchen every day. "Thats a nica color".. and her song is the best of the best. Whomever you are that are the videographers (of your mother or grandmother) You are AWESOME... that you let her do her thing and didn't interrupt her at all - it makes the process PURE AND NATURAL.       Don't pay attention to these with the thumbs down. They don't mean it. They are bored and have no life and want a reaction which they get from people who comment about them. They don't give or take anything away. Surely Gina and the family understand that or she would not be on social media. I love her and I've learned a lot from her. She is very warm and loving. I relax watching her cooking and singing. So happy her family put her on RUclips.

    My family is from Italy and immigrated to Canada after the war. I was born here in Canada. Must say that I have tried many focaccia recipes and all of them good, very good actually but yours is my favorite by far. I have made it several times now and each time it comes out wonderful. My parents who are now 92 and 98 years old enjoy yours the most. God bless you and your family and thank you very much for sharing these wonderful recipes.

    Singing in remembrance of her father and how happy he was, choked me up so bad. When a father is happy and proud of his children it really is a magical moment.

    When I was young my family moved to a small suburban neighborhood. Lots of new friends & cultures! One family was Italian, Neapolitano. Their nana lived a short way aways from us (in little Italy). All day Saturday she shopped & cooked. Sunday her son-in- law went to her place & brought her and all the delicious food to her daughter’s home. After church we always went to see what Momma Icano made for us! All day the food was on the table & anyone who came ate! Her granddaughters had no interest in cooking, but I did, so she taught me a few things. I love your voice & accent & food. It brought me right back to my childhood! I love it so much, all those wonderful times. Gracias!

    OMG! Her father sang when he saw the beautiful focaccia!! She thinks of him all the time...I think about my Italian father too, and miss him dearly!! He loved to make bread. This simple act of cooking for family is pure love and what the world is missing today!

      In times when I'm in a crisis or my back is against the wall I head for the kitchen and cook for others. It jump starts my positive energy flow and soon I get the answers I need to get over whatever obstacle had me stymied. For me it's cooking, for others it might be something else. I find great energy in feeding people. I have no family so I feed my neighbors and coworkers.

    I enjoy you so much. I was born in Italy and came ti America when I was 8 years old. now that I am 73 I miss Italy I have never been back. We were a family of 8.. we are down to 5 with my parents gone to. I love to cook but Im not that great like you Gina. You really remind of Italy the way you talk about when you cook

    I wanted to chime in and say something practical about this channels recipes - They work and well. I've made a few of her recipes and all have turned out incredible.
    Try them. Definitely try her Ciambotta or her Zucchini Parmigiana. So far they are all great and she teaches so easily how to make them; the mark of a truly great teacher.

    I love how Gina uses the simplest tools to cook, like the fork and bowl to mash the potatoes. Nothing fancy, just like my Grandma in the 1950s. No need to buy fancy or expensive appliances. You’re amazing Gina!

    Hello Italian Grandma Gina, just checking in to make sure you are well and feeling really good.
    I am going to make another Focaccia right after I send you this thank you message.
    Since I watched this video I have made Focaccia many times.
    I have altered your recipe slightly by adding fresh garlic slivers into the dough.
    Also, I started using a ratio of 3/4 bread flour and 1/4 whole wheat flour which gives it an interesting depth in flavor.
    I have to confess that last week I tried someone else's Focaccia recipe.
    Absolutely NO good came from that experiment.
    My hubby made me promise to NEVER EVER again use another Focaccia recipe except yours.
    He did not have to twist my arm, I wholeheartedly agreed.
    That's it for now, Gina, I'm off to the kitchen.

    I lived in Oakland, CA when I was young and we lived in a neighborhood where our neighbors were almost all related Italians. There were two bakeries, Bon Gusto and Genoas, where my father would go and pick up different flavored focaccia and bring home a few slabs for us. It was great with salami and prosciutto. I have tried making focaccia many times but have been unsuccessful but I think if I follow your instructions I might have it turn out to my satisfaction. Yours has the texture with all of the nooks and crannies that I am looking for. Yours turned out beautiful! I loved the beautiful heartfelt song you sang too.

    Thank you so much for a beautiful tribute to your papa. I bake with the grandkids any chance I get (not much now, but things will be better someday!). When the dough is 'gramma perfect' i say 'Now we DANCE!' And we dance for our lives and tumble down laughing. Make memories if you don't have your own. Like Gina! We LOVE you!

    I am SOOO excited!!! I made your focaccia today and OH WOW!!!! It turned out ABSOLUTELY gorgeous!!! You're techniques and recipes are truly gems of your family history.     I like watching you cook better than those chef who are proud they made their authentic Italian dishes and ridicule others for different versions they cooked.
    Here you just concentrate on your dishes and it's so wonderful to watch. I also love your stories.
    I learnt from you mash potatoes were to make this bread which is something I never knew. It's wonderful. I like to try it but i have to make another one without potatoes because my hubby can't take potatoes.

    Brought tears to my eyes. My Peruvian-Italian grandpa used to comeback from the bakery on Saturdays, singing like her with a freshly baked foccacia under his arm. So so many years ago, so many dear memories! Wow I miss him so! Thank you Gina and God bless you too💕

    I love watching how she works the dough & touches it with her hands. So beautiful. So gentle. Reaching in, going to the bottom, lifting up & turning. It is important to know how to ‘help’ the dough rise. Love that she uses the same plastic & towel to cover. Thanking you for sharing these important steps. She is reliving her memories of her family making this important bread throughout her lifetime. It is a honor that she shares this with all of us. Her prayer over working the dough, her voice telling us how to ‘touch the bottom’ when dimpling. It is the voice of her mother & grandmother. Her song of happiness as the bread cooks.       Nice to see someone from Grottaminarda. Both my parents were born in Gesualdo but when they married, they moved to Grottaminarda, where they had a house, and my brothers were born. They were farmers, so I doubt they spent much time in town, however that is where they attended church, purchased what they could not grow or make themselves etc. I am first generation Canadian, living in Toronto, Ontario and have never visited the old country, but plan to take my entire family in a few years time. This region of Italy is especially musical and as the only girl in the family, I remember my father, to my irritation, singing Oh Marie every chance he had. What I would give to hear his lovely voice once again. Good memories.

    I made this today and it was fantastic.....I can not express accurately how much these videos mean to me. Gina makes me so happy, she is a great instructor. Her singing moves my soul. I think I have watched 75% of her videos so far an vow to watch them all ! She makes me so happy. Thank you for sharing your grandma with those of us who miss our own. God Bless !!

    I want to first thank her. As a retired baker I appreciate especially her generosity and her natural tendency to give all and holding back nothing. Her family helps her chronicle the specifics of each recipe and lesson. The written formula is always provided and she shows the viewer how to do it. In the pizza and bread lesson I was particularly impressed that she used one envelope only of yeast for 5 Lb.s of flour. So often bakers use far too much yeast and it was heartening to be reminded of the old-school ways, using so little yeast yet proving that it's the correct amount when you see the finish product in all its beauty. And finally I again commend everyone in her home for maintaining what Julia Child called an impeccably clean environment. All praises in every category. Warmest regards and respect. John daBaker

    I've read many Focaccia recipes and this is the 3rd one I've made. Besides being the easiest one I've tried, it was by far the best. The crumb turns out perfect. I've stopped looking for the perfect Focaccia recipe. Bravo!
