- Breaking away from the more well-known olive oil seasoned flatbread, focaccia in Bari, Italy is a feast of flavors made with tomatoes, olives, oregano, and olive oil. We visited Panificio Fiore, a local bakery that's been churning fresh focaccia every day for over a century.
The bakery is just a few steps away from the city's Basilica di San Nicola, an important destination for pilgrims all over the world. For those foodies exploring the old town on another kind of pilgrimage, a slice of focaccia here will cost only 1 euro and will for sure open the doors of heaven.

Claudia is the best presenter this channel has got. She’s so relaxed and really gets the people to open up about what they’re doing and why.
She asks all the right questions. I've seen many food-related videos where the host would ask stupid questions. Claudia makes the conversation feel like a class, rather than a boring interview for the master.
True, she asks the exact questions that pop into my mind...only she asks them a moment later. Naturally.

When i first started working in an Italian restaurant in Asia, I felt I was constantly offending the Italian chefs because they sounded annoyed when replying. Took me a few weeks to get used to the fact that this is just the tone they take when speaking. Now I’m so used to it I didn’t even catch it in this video until I read the comments.
My mom is like that x3 and i am still not used to it. And if i take on the same tone she would be offended. Lol

All the world has been consuming flat bread variations since the dawn of time, more than a precursor, focaccia has just followed a different evolution

Having lived in Bari, I can testify that Bari has the best focaccia in all of Italy.

Learning to make Barese style focaccia from my Nonna was one of the best culinary decisions I ever made, and it feels good seeing it not look too different to how these guys do it
My folks had some when they traveled to Europe about a decade ago. To my momma, Focaccia was one best things she’s ever eaten in her life. Even my pops loved the stuff.
Claudia you are a gem in that circle of unwantef hosts. Most of the hosts in this channel is all about themselves, while you? You just describe the food, is knowledgeable and is pleasant to the eye.

I kind of love how there's like barely if any secret recipes that I've seen in Italy. So many places try and hide what they make but because so much of the food in Italy is made traditionally the labour of work alone is often the secret ingredient.
years of experience gives a great amount of intuitive skill. this could be taught, but better yet is “learned” as well. they tell u how to do it, but unless u commit time and effort they know u can never match them, but if u put in the work u earn their respect

I agree with all the comments about Claudia, she's great. I love the part when she was joking about the temperature and wiped her forehead. But she was clearly struggling with the heat a bit. Very organic conversation. She asks the right questions as well, very unscripted.

It's the best! My familia lived in Carovigno for a couple years and then moved to close San Vito Dei Normanni (the US base there). I loved going downtown and enjoying all this food. I also loved the deep-fried panzerotti (Fratelli's they called them in southern Italy). All the ingredients were fresh or just recently canned the prior harvest. I've never at so good in my life. I really miss it.
