You always say things remind you of your nonna and rarely to never your mom, i imagine growing up you must have spent more time with her to have so many memories.
It’s not a preference thing (I love my mama!) but my nonna was the designated cook in the family with all the patience in the world and until this day, she cooks all day every day, she just loves it so I naturally gravitated towards her for that

I used another youtubers pasta dough recipe and it was kind of a disaster! Then I used yours and when I say it was the best dough I've literally ever worked with! Thank you so much! Love you, love your food!!!! You never failed me, not once

Where did you get this attachment? I have a kitchen aid roller and fettuccine attachment but they’re not combined like yours. I like that you don’t have to remove one to install the other.

I made another batch of garlic scape pesto this summer from my homegrown scapes and its to die for! I do have a question though. How do you know you pine nuts or walnuts are "toasted" enough?

Or juuuuuust before you think it’s golden brown in color, take them off the heat. I can’t depend on smell lately, post covid and all, my nose not too sharp lately. 🥺
I love that idea! Nuts begin to brown (they go from pale beige to a darker amber color) but they can burn quickly so take them off the heat as soon as you see them start to brown or they get bitter
I know you’re using a KitchenAid mixer, but is the pasta roller attachment from KitchenAid also? Yours seems to cut a much wider noodle which I really like. Mine cuts more of a fettuccini width. Please let me know where you got the pasta roller.
Not with egg based pasta! When I do short cut pasta (orecchiette for example) then I do a semolina based dough. I don’t make it as often because I personally prefer this type of pasta more
