My grandma was Italian and she told me to not put salt into the pasta dough if you want to dry it because salt attracts water/humidity. Only use salt in your dough if you eat it fresh or if you freeze it. Greetings from Austria

My family, friends, and I love flavored pasta. Since my herbs are so abundant I use up my dried herbs from previous seasons in my pasta dough. It helps me use up dried herbs, takes no extra time, gives the pasta some extra oomph, looks pretty, and is just awesome in garden gift baskets. I like using citrus zest in some pasta doughs as well. There’s something really wonderful about lemon/thyme noodles in chicken soup, or lime/cilantro noodles in ramen and chow mein! The combinations are endless and yummy!!

I make large batches of pasta just like she does, but instead of drying mine, after cutting, I pile up a small "nest" and freeze them on cookie sheets, then put them in baggies in the freezer. When you put them in boiling water you gently teas them apart with a fork.

I had a boyfriend when I was in high school in the 70's who was Italian & he lived with grandma who made homemade pasta. She had racks that she dried the noodles on.

One of my fondest memory of my Grandmother is making pasta and laying the noodles out on the yellow table to dry. Every so often she’d pick up a group of noodles with her fingertips to stir them to dry better. She’d ‘catch me’ sneaking a noodle before it was dry. Such a fond memory. 💜😀

I make noodles like my German granny did, just put the flour out onto a board and put the eggs in a center well and mix with your hands. i was diagnosed with Celiac 30 years ago so it was a good thing I had this skill because you could not buy noodles in a store. I make mine out of rice and tapioca flour with some xanthan gum (adds stretch because of no gluten) After i cut mine I lay them on a cookie sheet in the freezer and when they are hard I bag them up. They cook in only 3 minutes from frozen.

I just recently started watching your videos. I find them very interesting. There is one thing I would like to lt you know. I make homemade lasagna on a regular basis. I make my noodles from scratch. The one thing I discovered doing this is that when using fresh undried pasta you don't have to cook the pasta. Also I roll out my pasta in sheets the size of my pan, it's just so much quicker and easier. Please keep making your videos.

I love making it and sometimes I put a scoop of hot pepper spread{the kind you put on Italian subs} into the dough and that makes really great tasting pasta. Sometimes i add roasted red peppers to my dough that i have pureed in the food processor, It makes the noodles a beautiful orange color and adds wonderful flavor to the pasta.
I have been making our pasta for over 20 years now and I go by weight... 100g og OO flour to one egg.... it comes out perfect every time. Mix and knead until warm and silky, wrap and place in a warm place for around an hour. It will be smooth, soft and so easy to work with 😉
I think the really neat thing about making pasta is how simple is can be. It’s such an ancient food that had to be simple enough to do without tools. All ancient methods.

I think you are confusing "al dente" with "under cooked". When the pasta is "al dente" it means that it's fully cooked but still firm. If you cut it you will not see the middle dot that you see when it is under cooked, but it is not mushy.
My mother-in-law was from Italy & the family taught me to make fresh pasta. I used to make it all the time until I got older. Now I make it only on special occasions. We use the hand crank pasta machine which causes it to absorb more sauce.....delicious!

We just tried making pasta yesterday for the first time and it is amazing how everything says you cant let pasta lay out to dry because it will kill you even though grandparents, great-grandparents, etc did the exact thing and we all survived LOL Really fun watching you do it. You can freeze dry eggs to use in winter when production is down. I saw it on UTube on Rosered Homestead. She freeze dries and dehydrates also. Smart well informed lady, like you are. I’m learning so much from you two ladies even if I am 72 yo. I think I tried to make pasta once, all by hand, no food processor or pasta roller. You have the large counter area and table that can be used. Makes it more convenient.

Those are tagliatelle!! Linguine are narrower, like squished spaghetti. We typically eat them with ragù or mushrooms and parmesan. I don't do any of the things you do, but I still appreciate your videos. I love your positivity. -from Italy

I love homemade pasta and make it for my family too. I find pasta lasts even longer, better quality if stored in glass. I save and have family save their gallon pickle jars to store it in, half gallon mason jars works great too.

I really love making homemade pasta. My grandma was blessed to live across the street from an Italian family. We have always made our pasta just like theirs. Simple just flour and eggs. Thank you for this great video. I've been cooking all of my life but up until recently had a fear of flour. Broke out the old KitchenAid months ago and started making pizza Non-Stop and 2 days ago made my first homemade fresh pasta ever. It was amazingly wonderfully delicious. I had some questions about drying because the articles I read were very confusing for home drying but you just cleared it up. Thank you for that! Cheers!
A tip I read somewhere once and use when making pasta, is to smash your ball of dough onto the counter a few times. It does something with the texture/molecules and makes the dough immediately smoother and more supple.
We made this pasta for the pantry challenge, and we linked your video in the description as our inspiration. We decided to kick it up and also make homemade RAVIOLIS and they were AWESOME! 🧡 Fresh pasta is amazing. Since we made several batches, we were also able to freeze the leftover raviolis, which made meal prepping so much easier. Thank you so much for sharing your videos.
I love milling my own flour into an all purpose flour That fluffs the flour automatic. It also after sifting leaves me with the hull fiber to use in other recipes. It’s the grain fibers. Can be used in whole grain and flax muffins and add nuts ! You can make nutritious bars by adding honey etc.

If you think about it adding salt is good cuz it will pull the moisture out of the pasta and make it nice and dry. And great for storing

TIP...warm your eggs and use lukewarm water. Makes the dough more elastic and smooth.

Those are tagliatelle!! Linguine are narrower, like squished spaghetti. We typically eat them with ragù or mushrooms and parmesan. I don't do any of the things you do, but I still appreciate your videos. I love your positivity.

That looks like tagliatelle, a little wider than fettuccine, and about half again as wide as linguine. It's perfect for a thick hearty sauce like your stroganoff. You absolutely rocked all that pasta!

Okay, now I am almost in a state of awe!!! I am 50 years old... old enough to be your Mom(not trying to take anyone's place just mentioned to show you amazed and taught me today!!!) and I have made pasta before, BUT never had anyone explain it needing to rest!!!
Your video, presentation and explanations were spot on, easy to understand no matter the level of tools one has, and you bring such a brightness of love with you into the video!!! OH, and I think the cut width of your noodles would be labeled as egg noodles...linguini being a bit more narrow....but that really doesn't matter, for the most part they are all the same recipe!!! LOL!!!

I love homemade pasta and make it for my family too. I find pasta lasts even longer, better quality if stored in glass. I save and have family save their gallon pickle jars to store it in, half gallon mason jars works great too.

I just preserved my eggs in hydrated lime, they laat 6 months in my cabinet:)

I really love making homemade pasta. My grandma was blessed to live across the street from an Italian family. We have always made our pasta just like theirs. Simple just flour and eggs. I still make their spaghetti sauce which is over 500 years old. Thank you Becky. Love, Debbie PS: maybe I missed this, do you put a tiny bit of oil on the pasta as it rests? We cut our noodles thin to use in homemade chicken noodle soup.

Thank you for this great video. I've been cooking all of my life but up until recently had a fear of flour. Broke out the old KitchenAid months ago and started making pizza Non-Stop and 2 days ago made my first homemade fresh pasta ever. It was amazingly wonderfully delicious. I had some questions about drying because the articles I read were very confusing for home drying but you just cleared it up. Thank you for that! Cheers!

A tip I read somewhere once and use when making pasta, is to smash your ball of dough onto the counter a few times. It does something with the texture/molecules and makes the dough immediately smoother and more supple.
Oh and this type of pasta is called tagliatelle. Linguine is a lot thinner in width :)

We decided to kick it up and also make homemade RAVIOLIS and they were AWESOME! 🧡 Fresh pasta is amazing. Since we made several batches, we were also able to freeze the leftover raviolis, which made meal prepping so much easier. Thank you so much for sharing your videos.
I love milling my own flour into an all purpose flour That fluffs the flour automatic. It also after sifting leaves me with the hull fiber to use in other recipes. It’s the grain fibers. Can be used in whole grain and flax muffins and add nuts ! You can make nutritious bars by adding honey etc.
