In order to make your life easier, it's always best to make pasta dishes in portions; just like Thai noodles! It's easier to control. But obviously this is a headache when we're cooking for a crowd because nowayyyyy am I flipping a pan with 10portions of pasta to reach peak emulsification 😅 This maybe why we never see family meals without anything but a Ragu? Boil a pot sauce and a pot of pasta, mix mix mix and you're done! So I guess, choose your poison?

Why don't you use egg whites? I am really curious. I make carbonara probably once a week and I do it almost exactly like in this video, but I use whole eggs, so I am wondering why only yolk? If anyone knows I would appreciate the answer, thank you 😊

I think I got it except for one thing: what do you think is the amount of pasta? A couple of ounces maybe? It’s supposed to be a single portion.
Uncle Tony, I bring my water to a rapid boil. Water contains salt. I add the pasta and keep stirring for a while to release gluten but my pasta still sticks together after draining. What am I doing wrong?
I as an Italian can tell you that if you use a good quality of pasta it will not stick. Use a larger pot with more water and turn the pasta as soon as it is put into the water. Once the pasta is drained put it immediately in the pan without making it wait.
I only use Barilla pasta . I add the pasta to boiling salted water and span the pasta. I keep moving the pasta around for a while. Once soft, I use tings and put pasta in colendae then to pot. Still sticks!
He should have used Pecorino. Anyway he used Guanciale and not pancetta, which is very important ! But when I think of the carbonara Laura once made here, where she even put onion (!), an ingredient that absolutely does not exist in a carbonara, and instead of Guanciale she put Pancetta, this was undoubtedly better.

To prevent scrambling of the egg yoke … you can temper egg yokes with couple tablespoons of pasta water then add the pasta and mix
