@ Charmaine Car... May I please tell you, there is one ingredient you will see in all of Ginas' videos that this food and culture would not thrive without. That is the cheese. We put it in our coffee. PECORINO ROMANO. Can be bought grated or bought in a block and grate it yourself, in bulk or grate over food when eating. If bought in a block it must be kept moist. Wrap it in a damp napkin or cloth and place in a tightly sealed plastic bag - all the air out. Don't let it dry out. There is nothing this cheese is not used with. Literally. You'll see 🌝😋

My grandparents migrated from Sicily separately, then met in America when my grandma went to work in my grandfather's clothing factory in Brooklyn. They moved to Wilkes-Barre, PA in the 30's to get away from the Mafia control of businesses. My grandparents and their four children (my dad 2nd oldest) are long gone, and us grandchildren are scattered across the country. This brings back such warm memories of Sunday dinners with lots of family around. I make my own pesto, and my adult children request it every summer.

You can freeze it too! Just drizzle a layer of olive oil on top to seal in the flavor before screwing the lid on. Replace the olive oil layer as you use it.

I got teary-eyed listening to her singing. I grew up with my Mom and Aunt cooking and they were always singing. I've only just found this amazing channel and have been binge-watching for past 24hrs. What is fascinating to me is watching vids from 2015 - when Gina was due to turn 80 in Sept - she barely speaks any English. But by 2017-18, she speaks it pretty good AND looks at least ten years YOUNGER.!!! My family immigrated to the US when I was eight years old. So I grew up without my grandmothers nearby. But, I remember my paternal grandma teaching me how to crochet when I was seven. And my maternal grandmother letting me help her in the kitchen when I was seven also. Because I lived with her between seven and eight years of age when my parents migrated, she had the most impact on me and cooking and sewing is how we bonded. I’m a grandmother now myself and Nona Gina brings back wonderful memories of my early years. When my grandchildren visit, I try to share my cooking with them and try to make happy memories they will remember when I’m gone. While I’m not Italian, the wonderful grandmother memories transcend borders and where we come from. These bonds are an amazing part of our lives. And cooking and eating together seem to make memories that are unforgettable. Thank y9u Nona Gina for your wonderful recipes, songs and for awakening the memory of loving times with my grandmothers.

You are right. Genovese peolple discoverd two important things: pesto and America (in this order!!). LOL. I use to do pesto at home. A friend of mine says she has to eat it on her knees. And I must say it is just a good imitation, because I can't get the authentic ingredients in Brazil. HAHAHAHA
@@vadinhopsc Basil you can grow in your window, i do that even here in the arctic Norway :) Nothing like fresh basil. Cheese is the hard part here, but really you can use alot of different cheeses :D A local cheese you have will probably do the work too, just try find a hard salty cheese made from sheeps milk. I often use parmesan since thats pretty easy to get here.
@@MrDanisve Hey! We are really far away...and at opposite temperatures. .. well, I've tried 2 times to grow basil in my apartment (in the open services area) and both times it dried down. So I usually purchase it at the supermarket. My daughter has seeded basil in her backyard and it grows beautiful, except that it is not the "foglio di lattuga" (lettuce leaves). I envy the basil shown in the vídeos. Hummmmmmmm! But it is good anyways. Instead of pinoli I use peeled almonds. The best cheese I've found here has been the Vaccino Romano. Very similar to peccorino. Farmers do not raise sheeps here (just a few, and peccorino cheese is too expensive). The final result, as I wrote before, is a good imitation of genovese pesto. Years ago, I prepared pesto for a group of friends. One was my boss. He said "Dude, I used to think I have eaten pesto a lot of times. Now, I've understood that I had never eaten pesto !" I thaught his wife how to do , and she mastered doing pesto. HAHA! Regards from Brasil.
@@vadinhopsc Hello :D Ahh yea, my brain just assumed ppl have like 20 degrees inside for some reason :P Yea basil does not like temperatures above 32 celcuis so that makes sense. Almonds is a great substiute, made pesto with it once at work when we ran out of pine nuts. Worked great and do not think anyone noticed the difference of our customers. But i bet Ginas basil is more flavorful than the one i grow here at home. Having been in Italy a few times and Genova once, all their vegetables are way more tasty than i get here at home (Probably cause of the right amount of sun, sun is kinda lacking here sometimes) However i have ordered a greenhouse, hopefully that will improve the quality of my vegetables We have lots of sheep, but for some reason we do not milk them and make cheese. Cow milking industry has pushed them out of the milking industry so they are only used for wool and meat now. We used to have cheese from sheeps but not anymore. Have to import from Italy/Greece. So gets abit expensive, but not to bad (Thanks to EU trade) Talking about pesto like this has made me hungry again :P Its allways fun and nice when people really love your food. Cooking for yourself is not the same as cooking for others :D Wish you all the best

What I would give for a video of my Grandmother cooking in the kitchen singing some of her sweet little songs to me occasionally looking over at me and smiling. It’s a memory that has always stayed pictured in my mind even after 20 years. So much time I doesn’t with her in the kitchen all the way up to one of her last times when she knew she was very sick. She said to me as she was pulling a Turkey from the oven” well kiddo are you ready to take over. Think this may be my last Thanksgiving dinner I cook” she was getting right she passed away 13 months later. I took it over, only having one time cooking Thanksgiving for her. I miss her very much!! I appreciate your videos, cooking, singing, cleanliness, gives me smiles and precious moments I can remember. Thank you!!

All Things Carolyn Homemade pesto sauce can be kept in the fridge for a week or so. In the freezer you can keep it up to 4 month in airtight container

You can freeze it too! Just drizzle a layer of olive oil on top to seal in the flavor before screwing the lid on. Replace the olive oil layer as you use it.

I just love Nonna Gina so much!! Your family is so blessed to have such a remarkable woman in your family and she is equally as blessed to have such a caring family who loves her so much!! I got teary-eyed listening to her singing. I grew up with my Mom and Aunt cooking and they were always singing. I've only just found this amazing channel and have been binge-watching for past 24hrs.
What is fascinating to me is watching vids from 2015 - when Gina was due to turn 80 in Sept - she barely speaks any English.
But by 2017-18, she speaks it pretty good AND looks at least ten years YOUNGER.!!! And i absolutely love hearing her stories about Italy & her parents, and hearing her songs.💗

Mary Wehmeier I freeze in ice cube trays then zip bags. Keeps a year or more. Yes, it discolours a little, but no worries for cooking.
we've had way too much rain this year my basil is spindly and yellow - wet feet I think. I try again next season I guess.

My family immigrated to the US when I was eight years old. So I grew up without my grandmothers
nearby. But, I remember my paternal grandma teaching me how to crochet when I was seven. And
my maternal grandmother letting me help her in the kitchen when I was seven also. Because I lived
with her between seven and eight years of age when my parents migrated, she had the most impact
on me and cooking and sewing is how we bonded. I’m a grandmother now myself and Nona Gina
brings back wonderful memories of my early years. When my grandchildren visit, I try to share my
cooking with them and try to make happy memories they will remember when I’m gone. While I’m not
Italian, the wonderful grandmother memories transcend borders and where we come from. These
bonds are an amazing part of our lives. And cooking and eating together seem to make memories

You are right. Genovese peolple discoverd two important things: pesto and America (in this order!!). LOL. I use to do pesto at home. A friend of mine says she has to eat it on her knees. And I must say it is just a good imitation, because I can't get the authentic ingredients in Brazil. HAHAHAHA
@@vadinhopsc Basil you can grow in your window, i do that even here in the arctic Norway :) Nothing like fresh basil. Cheese is the hard part here, but really you can use alot of different cheeses :D A local cheese you have will probably do the work too, just try find a hard salty cheese made from sheeps milk.
I often use parmesan since thats pretty easy to get here.
@@MrDanisve Hey! We are really far away...and at opposite temperatures. .. well, I've tried 2 times to grow basil in my apartment (in the open services area) and both times it dried down. So I usually purchase it at the supermarket. My daughter has seeded basil in her backyard and it grows beautiful, except that it is not the "foglio di lattuga" (lettuce leaves). I envy the basil shown in the vídeos. Hummmmmmmm! But it is good anyways. Instead of pinoli I use peeled almonds. The best cheese I've found here has been the Vaccino Romano. Very similar to peccorino. Farmers do not raise sheeps here (just a few, and peccorino cheese is too expensive). The final result, as I wrote before, is a good imitation of genovese pesto. Years ago, I prepared pesto for a group of friends. One was my boss. He said "Dude, I used to think I have eaten pesto a lot of times. Now, I've understood that I had never eaten pesto !" I thaught his wife how to do , and she mastered doing pesto. HAHA! Regards from Brasil.
@@vadinhopsc Hello :D Ahh yea, my brain just assumed ppl have like 20 degrees inside for some reason :P Yea basil does not like temperatures above 32 celcuis so that makes sense.
Almonds is a great substiute, made pesto with it once at work when we ran out of pine nuts. Worked great and do not think anyone noticed the difference of our customers.
But i bet Ginas basil is more flavorful than the one i grow here at home. Having been in Italy a few times and Genova once, all their vegetables are way more tasty than i get here at home (Probably cause of the right amount of sun, sun is kinda lacking here sometimes)
However i have ordered a greenhouse, hopefully that will improve the quality of my vegetables
We have lots of sheep, but for some reason we do not milk them and make cheese. Cow milking industry has pushed them out of the milking industry so they are only used for wool and meat now. We used to have cheese from sheeps but not anymore. Have to import from Italy/Greece. So gets abit expensive, but not to bad (Thanks to EU trade)

What I would give for a video of my Grandmother cooking in the kitchen singing some of her sweet little songs to me occasionally looking over at me and smiling. It’s a memory that has always stayed pictured in my mind even after 20 years. So much time I doesn’t with her in the kitchen all the way up to one of her last times when she knew she was very sick. She said to me as she was pulling a Turkey from the oven” well kiddo are you ready to take over. Think this may be my last Thanksgiving dinner I cook” she was getting right she passed away 13 months later. I took it over, only having one time cooking Thanksgiving for her. I miss her very much!! I appreciate your videos, cooking, singing, cleanliness, gives me smiles and precious moments I can remember. Thank you!!
