Try this: Tex-Mex Casserole
Ingredients
2 lbs. ground beef
1 package taco seasoning
1 cup chicken stock
1 onion, chopped
1 bell pepper, chopped
1 cup rice
1 can diced tomatoes
1 can Rol-Tel tomatoes and green chillis
1 can sweet corn, drained
1 can black beans, drained (optional)
2 cups shredded Fiesta blend
1 green onion, chopped (for garnish)
Salt & Pepper to taste
Preparation
In large skillet, cook beef, over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
Add in rice, taco seasoning, chicken stock, onion and bell pepper, corn, beans and tomatoes.
Add all ingredients to crock pot. Stir
Add cheese to top
Cook for 30 minutes
