When my daughter was 13 she made a cake from scratch and called me and said it didn't rise. I asked her if she put baking soda in, she said no. The recipe called for soda, so she put in a teaspoon of cola. She is now 44 and we still laugh about this.

I'm a pastry chef now, but when I made my first apple pie for a boy I had a crush on, I forgot the sugar. My dad has always teased me that I was trying to get the boy to "pucker up". Its funny now...it wasn't then! ;)

You've convinced me to buy a scale. With so many options, is there one that you recommend (or must have features that a novice kitchen scale shopper should look for)?
@@colleenm5760 I have a digital STARFRIT brand one. Simple, small, easy to use. It's got grams, ounces & other functions I don't really use. I mainly use it for weighing stuff, so I use grams. For sure there are other brands out there. It's got a glass top/base easy to clean. Fun to use. PS: I would stay away from the dialed ones. The ones with the spring shaft. Digital ones are more precise.
It seems really odd to me that anyone WOULDN’T use scales, but that’s because we don’t use measuring cups at all in the UK. We have small measuring spoons, for liquids, but not cups.

@@handekai8500 Firstly,put in a warm water. If it does not become bubbly and increase its amount after a few minutes,then it's dead.
I'm only now realizing that room temp ingredients are important! Domed cakes were my life lol

@@blueeyedbehr I use the Wilton cloth cake baking stripes. How do you make cake stripes stay in a 9 ×13 rectangular pan? I even have trouble making them stay in a circular pan.

I've been baking for decades and I thought I knew it all. But this was a tremendously useful reminder to go back to basics. It pointed out that I've gained a lot of bad habits over the years and should re-learn simplicity.

I feel the same way. It is amazing how you don't realise you make these errors and they matter to the final result.
First of all, this channel is amazing! John feels like a friend teaching me, always caring, friendly, funny, smart, but also honest and open about making mistakes like everybody else... love it!
And this has to be one of my favorite videos, because I do a lot of these mistakes and even tho my cakes turn out fine most of the time, some of these results happened to me and I didn't understand why. I also believe that I'm missing out on my cakes being even more delicious!

Great tips! Thanks. I learned about weighing everything when I lived in Germany. Even liquids! I have to admit, metric is easier when it comes to this.

I bake very simple things once in a while but I looove desserts and am always wanting to bake more. I’ve been looking for something just like this! It’s hard to learn baking basics if you don’t have a lot of experience or don’t know other people that do either. Would love to watch an entire series for other forms of baked goods like pies, cookies, breads etc.! 😊🙏

@@sophiallthingsxena4369 the “trick” for perfect pancakes is similar to a cake. don’t over mix, preheat your griddle(if using a skillet: make 1 big pancake at a time. I use Pamela’s gluten free mix, premix my egg, swap in some buttermilk and fold in a little extra melted butter from seasoning the skillet. I get perfect fluffy pancakes every time (kid’s favorite breakfast).

Have you seen me with butter and Cream cheese in my pocket?? Helps to get them to room temp but don't forget about them!

Yes!!! I once made chocolate chip oatmeal cookies. Turned into a giant glob in the oven. I refused to waste my time and effort so i made it into cookie balls. My mom came over and saw them on the plate on the counter and thought I made meatballs for dinner 😂 they did not look appetizing but they tasted great haha
Please make more of this type of content for other baked goods. I'm sure many home-bakers will benefit from it 😊

The flour trick just blew my mind. Granted I’m a beginner and by no means know a lot about baking, but I didn’t realise it would make THAT much of a difference. That’s 25% more flour than needed. Of course it would make a huge difference.
Especially when making pie crust!
I have tried to bake a white cake for so long! After watching this video yesterday at 6 PM. I went and took everything out of the fridge and measured my ingredients and made your vanilla cake recipe and omg! It was moist and delicious. The measuring is what was getting me! Thank you so much!

I always over mix because I thought it would make everything mix better! No wonder my cake sometimes comes out weird.
And sometimes they dome out or crack in the middle, or worse, are still batter in the middle. Will take these tips to heart to make sure it stops happening. Thank you!
Never overmix cake batter my friend. Otherwise you will activate the gluten in the flour and it will make a very dense, tough, and bread like cake. If u overmix sponge cake batters such as genoise or chiffon, u will deflate it and it will not rise properly and become dense

I discovered the overmixing mistake when I was a young teen. Using a box cake mix to make a cake, it said to mix like four or five minutes. But when I mixed that long the cake came out so dense and heavy. I learned very early to just mix until all of the flour is combined. Even with a box cake mix, overmixing can be disastrous.
It's such a good lesson to learn. makes the biggest difference in texture
I had the exact opposite experience, that’s super weird! I saw someone saying you’re supposed to mix premade box cakes for 3-5 minutes because it makes them super fluffy, so I tried it and mine came out crazy soft and fluffy
I got a kitchen scale after I started watching these videos, and it is SO much easier and faster! I have learned a lot about baking from you for sure. I have to say, I am a bit disappointed we didn't get to see any disasters...😁
I have learned sooooo much even having baked for tons of years. My biggest frustration is oven temperatures even with thermometers inside. Every oven seems to be different in terms of temperature. We retired in Mexico several years ago and I have finally mastered metric. Also, we moved three times in three years for different reasons; more to the point, each oven was soooo different some gas, one electric. It’s been fun and your videos are a great help and certainly, in some cases, learning new tricks. Muchas gracias!

Ahhh I knew I'd get called out here for always forgetting to have my butter be room temp but wow I had no idea that it wasn't just the butter. Also that flour tip and hand mixing the last half of your ingredients is really good to know too. I'm preparing to make a 4th of July cake so thank you so much!

My mom always told us not to jump when there was a cake in the oven.
Maybe that was just a mom thing and she didn’t want us jumping in the house, but she said it would make the cake fall.
Even now as an adult I am careful not to jump around, dance or get too rambunctious when a cake in the oven.
i don't think any jumping in the house would mess with the oven, Unless you're in a trailer home and underneath you is empty then i understand but it shouldn't fall at all.. even if you jump super hard next to the oven
If you open up your oven before the minimum baking time that's required, you can offset the temperature of the oven and that can cause flops such as deflation

I always hand mix my batter with a whisk. I always wondered what would happen if I over mixed my batter so, thank you for explaining this.
Letting the cakes cool!! I only needed the one time to learn my lesson; we had a pool of cream cheese frosting around the base of my carrot cake.. so sad.. Thank you for the tips! Next time maybe include some bloopers; love to see that you're human also =))

I have baked for over 50 years and have made all these mistakes! Thank you for the hint about the flour and over Mixing! My last cake was dry so maybe that was the problem. Just goes to show me I can always learn more. And it seems if I just bake for just us it’s perfect, but for a special occasion or for company Murphy’s law applies. Many years ago made a chocolate cake when my parents visited. Turned my back and our Great Dane was licking the cake! Funny now, but not then.

I’m slowly starting to get into baking. I’m a horrible cook but I love to bake sweets. I made a strawberry shortcake and while not the best looking thing, it tasted SO good. It wasn’t sugary and was perfect.❤ I hope this video helps.

This is such a fun video. Please consider to make more of this types of videos. I am a beginner in the kitchen, so this helps me so much. I learn a lot of things' in the kitchen.
To me the kitchen is like exploring the universe, a lot of fun and learning.
I made many mistakes so far, and some of those mistakes could have really been prevented, some were quiet expensive mistakes.
I made a 2 tier cake once, the biggest mistake was not to cut off the dome. It did not collapse at all. I learnt three major things with that 2 tier cake. All's well that ends well.

I used to do everything you just said in the video. 8 yrs old, having no one to show me how to bake…..rock hard cakes, no rise etc etc. now a qualified baker in my 30’s I remember those moments.
I made my first homemade cake last week & amazingly enough it turned out perfect. I made another one yesterday & something was off. It cooked slightly quicker, had a dome, & wasn’t quite as moist as last time. No, no ingredients were cold except maybe the soft butter which obviously had to be. I’m almost certain it was a little too much flour. I even remember when I was measuring it out thinking it was slightly over but that I’d rather it be too much than too little.
