    Making a beautiful cake shouldn't be frustrating, unfortunately I know that it often is, especially when a new technique or special request from a friend takes us out of our comfort zone! I've compiled all cake decorating the tips and tricks I could think of into this post to give you a leg up on your next project. I'm sure there's more than one think I've neglected to address so please make sure to leave a comment if I've missed a topic you want to know more about!

    My mother has been really depressed and sad lately. With all the stressful things she has been going through, i wanted to make her birthday special. When I saw your videos i just knew your recipes would be perfect to make her birthday special. I decided that I am going to try to make your strawberry cake with roses and macarons for her!     Love your tutorials! I'm a VERY amateur cake decorator, but I watched your tutorial on buttercream roses. I made a batch and froze them since they actually looked really good. Then I made a large birthday cake with them, and everyone was wowed. I had a few left over and made a tiny 4", three tiered cake for a single lady's birthday using the remaining flowers. She felt so loved. I can't wait to try the palette knife roses. I also made the Christmas trees using ice cream cones (in white to look snow covered) along with the candy melt snowflakes and the candy cane filling for a Christmas get together. That one needed a little help with the ombre icing, but everyone loved it and took pictures. You made me look like I know what I'm doing! Thank you for the time you take to explain and demonstrate everything.

    When I first started baking(total amateur here but LOVE baking) I loved Emma's goodies channel. She helped me learn the basics and then I stumbled upon your channel and I made your mocha cake and fell in LOVE 😍😍😍. Your recipes are the BEST and I enjoy your content.       Preppy Kitchen Yes, so far I've only tried your mocha cake recipe and it's really delicious! Maybe because I'm a chocolate addict so it's really suit my taste 😄
      And your advice about the flat cake should be heard by EVERYONE. I'm so glad I found out about you. I've been subsribing to other similar channels as yours but your simple and laid back explanations makes me keep coming back. ☺️
      EDIT : Didn't use as much coffee as you did though. I used more chocolate. **guilty** 😅

    I will tell you a secret as someone from a country that is famous for its cakes (Schwarzwälder Kirschtorte etc), Germany. We don't use cream in a butter cream. We use less butter and sugar and make the buttercream with vanillapudding.
    It is also quite stable, but it might be very different texturewise.

      Haha I am not an astrology buff however....when I met my husband, a friend who does ‘do’ astrology, told us that only a Virgo can tolerate another Virgo. We are both virgos. Over the last 20plus years, I have understood and never forgotten this.....and understood.

      there are different buttercreams like russian buttercream (made with butter or shortening with cold sweetened condensed milk) in addition to the other mentioned. Also adding cream cheese and gelatin(the most effective) is a good way of stablizing whipped cream, and in the case of gelatin/jello a good way to add flavor and sweetness.

    I've been binge watching your videos tonight! I started with the macaron video. You're very entertaining, instructional, and down-to-earth. Cake-baking has never been a huge interest of mine, but what you've said about how people drop what they're doing to pay attention to cake is so true. It's actually kinda crazy that a cake can draw that sort of attention. Also I love what you said about how we live in a world of convenience, so putting some extra time to make something homemade and for a special someone means a lot. My S/O prefers the convenience over the homemade stuff... Anyways, much love to you and your family! I will bake a cake some time this year and use your amazing tips!

    Oh my god! I wish I had this video last week when I was making your lemon blueberry cake 😂😂 It was SO HOT in my house that my layers were sliding a bit, I should have totally chilled them after stacking THEN went in with the outside coat.

    What I do to stabilize any of my buttercreams, is meringue powder. Keeps the consistency firm but still silky and smooth to the taste. I made a ton of cupcakes for a baby shower and it was about 90 degrees and the frosting kept it's pretty shape.

      Sure you can hon... This is not my recipe I found it on a site called "Crafty" and it has been my go to since then. This recipe can be cut down and the half recipe will frost 24 cupcakes beautifully.
      A couple of things is, NO liquid is used in this recipe (milk, or cream etc) and a great amount of time beating is essential. This is for the full recipe:
      1 ½ lbs real salted butter (6 sticks or 3 cups) at room temperature (I use salted, but you can use unsalted and add the salt, but I find adding salt gave it a "gritty" texture).
      2 lbs. powdered sugar (8 cups)
      2 tsp. vanilla
      2 Tbsp. Meringue Powder
      Cream the butter and the vanilla (use a paddle attachment if you have) for about 2 minutes. (You can use other flavorings in place of the vanilla)
      Add half of the powdered sugar and ALL of the meringue powder and mix it until it is well incorporated.
      Add the rest of the powdered sugar and beat on high for approximately 8 minutes. This is a must do step for the frosting to get fluffy and smooth.
      This recipe kept the shape of my cupcake frosting in over 90 degree heat for most of the day. Please let me know how you make out and here is the web site if you would like to read about this wonderful buttercream which is easy, and tastes fantastic.

    Thank you so much. Your instructions and your techniques are so easy to understand. I always appreciate you sharing your own tips and advice. I've watch instructional videos on cake decorating or all together assembling a cake from start to finish but it never has those extra tips that I can use incase something goes wrong. You on the other hand always show us how to save ourselves from a catastrophe by fixing this or that. I love that about you. Because of your videos I'm now into cakes and cake decorating. 🎂

    The blue colored sugar reminds me of a lab I had to do in chemistry that used Copper II Sulfate 😂❤❤❤

    Your roses always turn out to be just beautiful. Your cake decorations are always clean and flawless. I'm from Nicaragua(Latin America) and in my country we work with Italian meringue. The hot weather helps with Italian meringue it gets dry better when it's really hot, but it's hard to get the perfect consistency, I'd work hard to master the perfect Italian meringue. I'd try buttercream before, but the weather here it's too hot, up from 37 to 43 celcious degrees and it melts down quickly, the only way here you could work with buttercream it's in a room with air conditioning and keep the cake freeze.

      Oh yes. I had my first attempt at swiss meringue yesterday and boy it was almost a disaster. It melted so quick. I wanna learn what type of frosting is good in hot and humid climate.

      You could try to make the butter cream with vanillapudding instead of cream and with less sugar and butter. It's my grandma's secret recipe.

      Hii!! I'm from Belize. It's soo nice to "meet" a fellow Latin American! I did try an American buttercream once as well, but I just couldn't get the right consistency, I'm guessing because of the weather. And I haven't done much decorating yet, so I haven't tried much different kinds yet. Some of my friends really like buying the stuff that you just whip until it's stiff. I have tried that, and it works well for some more detail, but my dad likes something sweeter, so what I tend to use is typical Betty Crocker frosting mixed with icing sugar, till I like the consistency.     I live in a hot/humid environment and I actually find Italian buttercream holds up better than American.

      That's just what they're called based on where the recipes were developed. And no, Italian buttercream is not made mainly from milk. It has literally none. Did you watch the video?

    you mentioned using mascarpone, and I've tried several times and for some reason I just haven't had good results. can you suggest a brand of mascarpone to use? perhaps that would make a difference. all I've used so far is trader joe's brand. and if possible, can you also post a tutorial? thanks!!

    Buttercream:
    Try using 1/4 of corn starch, instead of whole sugar, for example instead of 500g of sugar, use 350g of sugar and 125g of corn starch

    question:
    whipped cream is whipping cream + sugar- its soft
    buttercream is butter + sugar - not fluffy enough
    what would happen if you use half amount whipping cream + half amount of butter + sugar. would that be less soft?

    Appreciate the fact that you stress having clean hands when baking and decorating. It's so important, especially when making cakes for others. You, Martha Stewart, Bobby flay always have clean finger nails. Which is number one to me because that's the first I'm looking at. I constantly wash my hands as well. So thank you.
