I worked at Whole Foods bakery for 6 years and this is how we made our berry Chantilly frosting 8oz room temp cream cheese 8oz room temp mascarpone 2 cups of heavy whipping cream 1 1/2 cups of powder sugar 1 tsp of almond extract Mix the cream cheese and mascarpone cheese until combined add the powdered sugar and mix until incorporated and finally add the heavy whipping cream and almond extract on low and then speed it up to medium high speed until light and fluffy careful not to over whip it or it’ll be grainy. And that’s it you have the Whole Foods Chantilly frosting ☺️☺️
UPDATE: I made this this morning and I would recommend putting the icing mix in the fridge to firm up for 30 minutes. Mine was VERY soft and weepy. Still it was delicious. Thank you so much. A friend's birthday is tomorrow and this is a perfect summer birthday cake!
I made the cake also and had the same result. The frosting was too runny at first. I had to do a crumb coat, then put the remaining frosting and the cake in the refrigerator, then finish up. Still, I couldn’t get the smooth finish like John did, but the cake was still very impressive and looked and tasted fabulous.
For this type of frosting, I always add some instant vanilla pudding to help stiffen it up -- works like a charm. For me, the sugar free stuff works best
I made this for a co-worker's wedding 2 years ago and everyone loved it. I had to practice getting the layers just right. And it was my first attempt at making a naked cake. Talk about challenging. btw, Whole Foods makes this cake and it's delicious but I think homemade is best.
My husband went out grocery shopping today so he can get me all ingredients for this cake and I made this today. Omg John! He enjoy eating it and almost have eaten half of the cake I made. Your Chantilly cake recipe is so decadent, soft creamy frosting and the cake flour made the cake so fluffy and light! Amazing! Thank you for this recipe.
I make my own Mascarpone: Heat heavy cream until it thickens then add 1 lemon juice and let it cool off, then strain using cheese cloth in the fridge overnight. Youi end up with the best creamiest Mascarpone. I stopped buying as it's expensive.
What a delicious cake just made it for my husband’s birthday tomorrow and half of it is already gone! Thank you so much for sharing the recipe, all the delicious flavors come through in one single bite!!

Hey John made this today and it came out AMAZING! I swapped the berries for chopped up fresh mango and mango preserve. It tasted do summery and wonderful. Thank you for the recipe!!
Love this recipe. Mouth watering just watching you create it. Loved your precise description of “folding in the whipped cream.” Not sure if you’ve seen the Schitt’s Creek scene where mother and son have no idea what “folding in” means, but it’s hilarious. You’d love it! Thanks!
Made this amazing cake 3 weeks ago, and making it again today. I left out the jam because I am not a fan. It was still the most amazing cake in the universe!
Yes! I’d take a melon baller and scoop a bit of the middle of the cupcake for the jam and chopped up berries, then do the frosting and the berries on top. I think it would be a very nice cupcake!
I made this for my daughter's bday today but used only strawberries as those are the only ones I have. Came out great, one of the best specialty cakes I've done. Thanks.
Such a lovely cake! When I get the energy, this is the next thing I’m baking. I’m also a fan of Bel Gioso. It’s consistently good both in flavor and texture.
I have terrible look with room temperature cream cheese always breaking! If you actually use the paddle and cream the cc, sugar, and mascarpone together, you can add the cream while using the paddle and then switch to the whisk and whip everything until stiff peaks using all cold ingredients! Just something I think is super easy
Also i only have 10,8, and 6 inch pan.1 of each would it be posibble to split the batter and bake the first one then let it cool while the second layer cooks???
Made this upon request from my granddaughter for her princess 5th bday party. It was the most delicious and prettiest cake I've ever done. It was downed almost immediately. I'm going to need to go much bigger (pans) and double the berries for next time. They want it for Thanksgiving and Christmas now. I guess we have a new tradition and it's one I'd never heard of. She gave me her request and I put that in the search. I'm sure glad you had one available. It was a BIG HIT!! Thank you. P.s. I enjoy your singing, I too make up sings while in the kitchen. Now, on to more deliciousness. 💛🎼🎶🎵🎶
Didn't know it had such a pretty name either. 😉😍?she just said a strawberry blueberry layer cake with real fruit in the middles and on top of white frosting. And BOOM we found a new and instant favorite. 🎉 thanks again

I made this cake yesterday for my husband's sweet aunt for her 81st birthday!!!! She loved it so much she wants us to make it every year--and she is an amazing cake baker herself. We are having excessive heat warnings where we live, (heat indexes to 115) and this cake is the perfect, light, fluffy and cool antidote. Thanks, John!!!!💞💞💞
Troy Whitaker Pellerin, I was wondering the same thing that was one of the reasons that I always love getting that cake from Whole Foods was because it had an almond flavor.
Whole Foods typically uses an almond emulsion, but only in the frosting. You can purchase LorAnn almond emulsion and add it to the frosting instead of the vanilla extract. Almond emulsion has a more concentrated almond flavor versus almond extract.
This looks delicious!! Whenever I want to bake something and I see you have a recipe for it I always go with yours - your recipes are consistently delicious and your step-by-step videos are really helpful! Appreciate it :))

Thank you John it was fun time to bake with you ( I like your explanation and little tips, for example how not to over whip double cream and just use hand whisk to finish it off) 👍
That looks DIVINE! And that Chantilly frosting is absolutely dreamy! Sidenote: Watching people have to work around a Kitchen Aide Mixer gives me anxiety. Doesn't perform all that well and seems awfully hindering while adding ingredients. I'm all for the Bosch mixer, and would love to see you compare the two.

Ah, I wish it wasn't too hot to bake. Sadly, with temps routinely getting over 110*F right now, I'll have to wait to make this.
