- Berry Chantilly cake is made with tender vanilla cake layered fresh mixed berries and frosted with a luscious mascarpone whipped topping. It's super moist and has an amazing flavor combo with its tangy frosting and sweet berry filling!

Vanilla Cake Recipe ►
13 oz (368.54 g) bleached cake flour
13 oz (368.54 g) granulated sugar
3 tsp (14.79 g) baking powder
1/4 tsp baking soda
1/2 tsp salt
8 oz (226.8 g) butter (unsalted)
1 Tbsp vanilla extract
10 oz (283.5 g) whole milk (room temperature)
3 oz (85.05 g) vegetable oil
3 large eggs (room temperature)
Chantilly Cream Ingredients ►
16 oz cream cheese (softened)
8 oz unsalted butter (softened)
16 oz mascarpone cheese (softened)
22 oz powdered sugar (sifted)
2 tsp vanilla extract
8 oz heavy whipping cream
2 tsp instant pudding mix (Or any other whipped cream stabilizer. See my post: sugargeekshow.com/recipe/stab...)
Berry Cake Filling ►
2 cups fresh or frozen berries
2.5 oz sugar
1 oz water
1 oz cornstarch
1 tsp lemon zest
2 tsp lemon juice

Sugar Geek Show can i use cream cheese frosting in between layers in a buttercream or fondant finished cake? is is stable there?

Can I use Philadelphia whipped cream cheese instead of mascarpone?
Can you take out the whip cream and just use for cupcakes?
Subtract the butter and add almond emulsion and u have the exact recipe from Whole Foods.... coming from a Whole Foods decorator

Vanessa Autumn yes 1:1 ratio. Add powdered sugar to the whip cream instead of the cream cheese-mascarpone mixture to avoid clumps.
So for the frosting it’s a 1:1 ratio of Marscapone and cream cheese, without the butter, and then add almond emulsion to the vanilla cake?

Ok so I just made this.. every step. I used the recipe for you store bough cake mix turned into a bakery cake. I put these in a dessert cup and had my husband and kids taste it.. they all said it’s amazing!! Thank you! I wanted to do a test run before I actually made the dessert cups for my daughters birthday and it was a success! Thank you so much for the written recipe and the actual videos of how to do it step by step. Really appreciate the time you took to record these videos.. by far the best baker ever! This cake was out of this world! I've never done the reverse cream method and it is the lightest fluffiest vanilla cake I've ever had. It's honestly much better than the slices I've gotten from whole foods!! I halved the recipe and did 2 6" pans. Thanks so much for this recipe!

I made this cake for husband's birthday. He said it was the best cake I've ever made! I did not stabilize the whipped cream. The results was an unruly frosting but it tasted great! Will definitely make again!!

At the Whole Foods in New Orleans where I first tried this... the icing tasted different than other Whole Foods. I found out they added some almond extract into the icing and it takes it to the next level! Thanks for this video :)

The recipe we use in store bakery is very similar but we use a strawberry simple syrup instead of the jam, frosting and then chopped fresh strawberries and whole blueberries between each layer. We don’t put vanilla in our icing either but it’s something I’ve often wanted to do if I made it at home!
Some bakers say use all cold ingredients vs room temp ?

Sugar Geek Show I sure will. I tried your ermine butter cream recipe and it tasted great but was a little melted. Anything I can do to make it more thicker? Would adding more pudding mixture help?
