This light and delicate mascarpone cake is what you need to make for your next special occasion! It's elegant and simple, yet full of incredible flavors! The mascarpone cake layers are made with lemon zest, berries and mascarpone; then the cake is frosted with a fluffy, lemony mascarpone cream frosting and garnished with more berries.

Thank you very much for another gorgeous cake recipe! I have a question: why not add at first the flour and then the whipped egg whites( knocks less air out of the dough in my opinion) Whyt do you think?
I try not to over-mix the flour since the more you mix flour, the more the glutens develop and the batter becomes heavy. :)

Hi! I haven't used coconut flour before, so I'm not sure about the substitution. Most gluten-free flours don't work as direct substitutes for regular flour. They just don't have the same volume or texture.
You can use the maple syrup and olive oil, but I would increase the flour by 1/3 cup to thicken the batter.

Hi! I hope you enjoy this recipe! You can try soaking the layers with a simple syrup to help prevent dryness. I find that most cakes get a little dry but soften when they come back up to room temp

That just happened to mine too! In the cake & in the frosting! I was using BelGiosio mascarpone & I'll never use it again ...unless the mascarpone shouldn't be at room temp?
Mine straight up curdled
Apparently, for anyone else this might happen to, if any ingredient being mixed with mascarpone cheese is a different temperature it can curdle very easily. Take mix & microwave less than a minute, then whisk then chill 10-15 minutes then re-whip & it is supposed to be ok. Still doing that now! Good luck!

These look more like modified cheese cakes rather than regular cakes. They are probably soft, but still dense and moist.

I didn't soak this cake since it was very moist already :)
If you look closely at the cake slice, it looked less like it had the crumb of a normal cake and more like a dense but very moist cheese cake.

For how long can the layers without the added cream and decoration in a cold place? I want to make the layers in advance.
The cake layers will be perfectly fine for up to 1 week in the refrigerator or freezer for 1 month. Make sure you wrap the cakes very, very well so they don't dry out! :)

Cream cheese will work great in this recipe, too. Use the same amount as the mascarpone - you'll need 4 oz for half recipe

Can we use almond flour instead of regular flour??
Unfortunately, almond flour will not hold up the same as regular flour. The cake layers will simply fall apart.

I did it with milk right from the fridge it came out kind of like ricotta cheese.
Hi! The batter should come together once you start adding the flour. I've had that happen before too and it won't affect the cake once it's baked.

Yes, for the cake layers. I do recommend fresh fruit if you can get it for the filling :)

Yes, you can use frozen berries but make sure to thaw them before using them and drain any excess juices

What’s the cornstarch for
The cornstarch helps suspend the berries in the cake so they don't sink down and it also turns the berry juices into a jam, so you don't have juice coming out of the cake! :)
