This is the best Cake Recipe with Mascarpone Cheese for Cheese cake lovers. This Mascarpone Cake with berries is the best cake I've ever had. I love almost all cake recipe with mascarpone cheese because the tastes are different from cheese cake with cream cheese. This is the Best Berry Mascarpone Cake that you can make for party, afternoon tea time and your breakfast. Very recommended Mascarpone Cake.
Ingredients :
- 130 grams (1 cup) all purpose flour
- 120 grams (2/3 cup) caster sugar
- 1 tsp baking powder
- 226 grams (8 oz) mascarpone cheese
- 2 large eggs, room temperature
- 84 grams (1/2 cup) canola oil
- 1 tsp vanilla extract
- 75 grams (1/2 cup) fresh blueberries
- 72 grams (1/2 cup) fresh strawberries
Baking Pan : 18 cm or 7 inches
Oven temperature : 180 degrees C or 350 degrees F
Baking time : 45 - 50 minutes (depends on your oven)

I made this recipe, I used olive oil instead and used raspberries only and it was DELICIOUS! This cake went in one day with my family. I did have to add a splash or two of milk to the mixture but it turned out perfect and soo fluffy! Thank you for the recipe!
