    Alyssa, a suggestion re: tomato paste. Add it after the spices, straight to the veg/spice mix. It will cook down, turning from red to reddish brown, and kicking off a cascade of flavors from the Maillard reaction. Yes it will stick a bit and need deglazing, but you want to do this. More complex flavor than the tomato paste slurry.

    • @wackythiefzg
      @wackythiefzg 4 года назад +36

      This is one really underrated comment. Definitely, tomato paste would give so much more flavor if it was added after the spices and then browned.

    Really nice soup but add your tomato purée (paste) just after the spices without mixing in with water. Tomato purée benefits from being ‘cooked out’ like spices.

    By the way, I only use green lentils in it because that is what I have in my kitchen. Red lentils take about 6-7 minutes to cook but the green lentils take about 25 minutes. Also, I prefer a fresh tomato cut into dices instead of the tomato paste.

    I make this soup a all and it’s so comforting and delicious! A few tips:
    1. Don’t let the spices burn, lower the heat and add the spices. Cover the pot for 1 minute and add the liquid. Burnt spices don’t taste good and lose the flavor.
    2. Always wash and rinse the lentils, atleast twice.
    3. Soak the lentils for atleast an hour, it helps digest the meal better.
    4 use fresh tomato’s instead of tomato paste

    Tomato paste in a soup or spaghetti sauce is best when toasted in the bottom of your pot by scooting the veggies to the sides put the paste in the center and stir around if more EVO needed to have the paste to a thinned out. Now encompass the veggies with the thinned out paste and veggies are fully covered in the paste. Then go on to adding your stock and water and other ingredients.
