I made this with less than half of the ingredients (no fresh herbs or kale, just used dried herbs and spices and frozen spinach, and used a teaspoon of flour instead of potatoes) and it came out tasting like a restaurant meal. So delicious! I imagine the original recipe is phenomenal.
As a carnivore, I can say with sincerity that this dish is sooo good that I made this recipe twice in 2 days and haven't even had meat cravings! I'm now a fan of your channel, thank you for sharing your yummy and healthy recipes with us!
@@laramarcal87 Carnivore diet is an elimination diet so a person can distinguish food sensitivities or allergies by process of elimination and slowly adding things back in. It's also used for epilepsy, heart disease, autoimmune and inflammation problems. They're not saying they're biologically carnivore 🥴 Humans are omnivores.

This one deserves a comment. I have been tired of eating meat all the time and was looking for a simple vegetarian soup. I stumbled upon this recipe and honestly thought that it may be way above my skill level but I decided to try it. After trying this recipe, I now thinking of cooking as a true art! I would never think that pairing some the ingredients would produce such a rich flavour. My mind is blown and after binge watching your videos, I may be on my way to becoming a vegan. I made this today and substituted collard greens instead of kale. It is delicious!!! I didnt do a bouquet just threw the herbs in lol. Gremolata takes extra work but totally worth it!

I'm in love with this soup and making variations of it. My favorite so far has been adding cremini mushrooms sauteed until brown with chopped fresh thyme, which was a test replacement for pancetta that I saw someone use in another recipe. Also riced cauliflower is an excellent addition especially the texture it adds. I like to sautee or roast everything whether I add a potato or cauliflower, getting some color on it gives the soup such a rich flavor.

i've made this twice, and every time i forget how delicious it is! i don't use the fresh herbs. just bay leaves and whatever dried italian herb mix i have in my pantry, but it turns out perfect anyway. i like to grate some lemon into the pot and squeeze in just a dash of lemon juice as well. it comes out soooo good, i could eat it at every meal! my husband is a huge meat lover and he's always asking for a second serving! thanks, nisha!

I made this tonight, and it came out great, even with several substitutions: extra carrots and potatoes for celery and artichokes I did not have; spinach for kale; marjoram for rosemary; dried basil and parsley for fresh, and a teaspoon of lemon juice for lemon zest. I also cut up and tossed a few small mushrooms that were around. I sprinkled a little organic virgin olive oil on the first bowl, but don't see the need for adding that extra fat to an already tasty soup. Looking forward to the leftovers, and making it again but with all the original ingredients. Note: your written instructions don't actually state when to add the Gremolata to the soup.
I always enjoy her recipes and presentation. When I cook with onions, I keep the peel as whole as I can and cook it as well. It gives off much flavor as well as some salts to the dish. Keeping it intact allows you to pull it out at the end of cooking.

Just wanted to thank you for the tip on preserving my herbs longer. This week I had to throw away my rosemary and thyme- I only got to use them once or twice! It hurts to throw it away.
Low moisture fresh herbs like rosemary and thyme should never be thrown out just because they dried out before you could use them. Even dried, they will still pack a lot more flavor than store bought dried herbs which may be up to a year old before they're packaged and sold.
I prepared this soup for the first time today and it was such a delight! It has a hearthy warm flavor and the gremolata gives it a bright zing. I actually discovered at the end that I had forgotten the parsley and basil. However I'm so glad I didn't skip the gremolata which I prepared with some fresh thyme instead. It turned out delicious! I'm in love with this soup :)
I made this last night and it blew my mind with the lemon zest. I mixed in roasted red peppers with the lemon zest basil topper. So good! Call plenty leftover for tonight

Thank you so much for the idea of freezing herbs in oil, I needed that. My daughter is vegetarian while the rest of the fam is not. I will make this soup as my base and then split adding ham for the rest of the family. This is a beautiful soup that I know will taste great - she will love it.
I don't use garlic nor onions of any kind because too harsh to digest and interfere with my meditations, and I don't consume oils anymore after learning that damage the arteries (Dr. Esselstyn's study), but all the rest looks amazing! Love this recipe, I am going to make it today, thank you! (P.S. It is possible to sautee the veggies in little or no water 😘) 💚

Made this tonight- was in a rush to get something going and all I had was dried white beans so I made the soup in the instant pot. Used the sauté setting to get the veggies started (added a parsnip to the ones in the recipe cause I had one that needed to be used up) and then when I added the liquid I threw in my dried beans and let them cook right in the pot. Sealed the lid and turned on the soup/broth setting for 45 minutes. Went to my apt and came back to an delish dinner. Also didn’t have the herbs for the finish but I did have a lemon so I just grated some lemon zest and put a bit of sea salt and garlic infused olive oil on top at the end and was really surprised at how much I liked that finish touch. Not gonna lie the lemon seemed like it might be a bit weird but it was so good!
This turned out amazing! I made it twice in the last 10 days. I love the creamy texture without coconut. And those flavors! So good. One more of your recipes added to our new healthier lifestyle cooking. Thank you, Nisha!

My late wife was a vegan and since she did all the cooking, I guess if I was going to eat, I'd better learn to love the vegan diet. I have found that if I leave the root end on the onion I don’t cry, no pain. Just use it as a handle while dicing or slicing. :-) I love your spontaneity and enthusiasm for what you Love doing.

Just made this soup for dinner and it was a super hit with everyone! My friend says she could eat it everyday and even for breakfast. The gremolata topping, which I have made before for one of her other soup recipes, was the kicker. I do add the lemon juice as well. This is a sure-fire winner to add to the regular repertoire.

If you want to use parm cheese on top, skip the red pepper flakes because it is heavy on the stomach. I have tried this with parsnips for extra vegetables and it also came out really delish.
Made this today. Made a few adjustments. Doubled the ingredients. For broth I used 96oz chicken broth because I like it soupy rather than a stew. It was delicious! Thanks!

This was so awesome and it was the perfect close to a day of smoothies, so warming and hardy! I added great northern beans to the cannilini, because I trippled the recipe and didn't have access to fresh herbs, so I used dry. So delicious!

This was soooooo good!! I made it for my dinner tonight, but the rest is for my grandma. She’s getting older & doesn’t like cooking… which means she doesn’t eat enough. I’m going to bag it & add the gremolata to the top. I do hope the full flavor of the gremolata stays, it was even better than I expected. I never give parsley the credit it deserves, it’s actually really flavorful especially with the lemon zest! (the rest of the bunch will be going to a chimichurri… yummy!) I did add 1lb of mild pork sausage, destroying the vegan aspect, but I tasted it before & it didn’t need it to be amazing. She definitely needs the extra protein & loves sausage, so I bent the rules for her. I’ll be making this one again & will likely just stick with the pure vegan recipe :)

Just wanted to thank you for the tip on preserving my herbs longer. This week I had to throw away my rosemary and thyme- I only got to use them once or twice! It hurts to throw it away.

Low moisture fresh herbs like rosemary and thyme should never be thrown out just because they dried out before you could use them. Even dried, they will still pack a lot more flavor than store bought dried herbs which may be up to a year old before they're packaged and sold.
I prepared this soup for the first time today and it was such a delight! It has a hearthy warm flavor and the gremolata gives it a bright zing. I actually discovered at the end that I had forgotten the parsley and basil. However I'm so glad I didn't skip the gremolata which I prepared with some fresh thyme instead. It turned out delicious! I'm in love with this soup :)

I made this last night and it blew my mind with the lemon zest. I mixed in roasted red peppers with the lemon zest basil topper. So good! Call plenty leftover for tonight

Just made it and the whole fam loved it. The gremalada was a great flavour boost. I ended up using rice instead of potatoes since we were out and used Swiss chard instead of kale. Still turned out great

I don't use garlic nor onions of any kind because too harsh to digest and interfere with my meditations, and I don't consume oils anymore after learning that damage the arteries (Dr. Esselstyn's study), but all the rest looks amazing! Love this recipe, I am going to make it today, thank you!

Made this tonight- was in a rush to get something going and all I had was dried white beans so I made the soup in the instant pot. Used the sauté setting to get the veggies started (added a parsnip to the ones in the recipe cause I had one that needed to be used up) and then when I added the liquid I threw in my dried beans and let them cook right in the pot. Sealed the lid and turned on the soup/broth setting for 45 minutes. Went to my apt and came back to an delish dinner.
Also didn’t have the herbs for the finish but I did have a lemon so I just grated some lemon zest and put a bit of sea salt and garlic infused olive oil on top at the end and was really surprised at how much I liked that finish touch. Not gonna lie the lemon seemed like it might be a bit weird but it was so good!

My late wife was a vegan and since she did all the cooking, I guess if I was going to eat, I'd better learn to love the vegan diet. So, I enjoy watching and learning how Nisha can help me to a healthier diet.

I have found that if I leave the root end on the onion I don’t cry, no pain. Just use it as a handle while dicing or slicing. :-) I love your spontaneity and enthusiasm for what you Love doing.

Just made this soup for dinner and it was a super hit with everyone! My friend says she could eat it everyday and even for breakfast. The gremolata topping, which I have made before for one of her other soup recipes, was the kicker. I do add the lemon juice as well. This is a sure-fire winner to add to the regular repertoire.

If you want to use parm cheese on top, skip the red pepper flakes because it is heavy on the stomach. I have tried this with parsnips for extra vegetables and it also came out really delish.
Made this today. Made a few adjustments. Doubled the ingredients. For broth I used 96oz chicken broth because I like it soupy rather than a stew. It was delicious! Thanks!

Yum! This looks so hearty! Can I use some other greens or a combination of two greens? I was thinking collard greens because I'm calcium deficient but not sure how it will change the taste.
Hi Priya, yes that should work, you probably want to simmer the collard greens for a bit longer since they're tougher than kale leaves.

This was so awesome and it was the perfect close to a day of smoothies, so warming and hardy! I added great northern beans to the cannilini, because I trippled the recipe and didn't have access to fresh herbs, so I used dry. So delicious!

This was soooooo good!! I made it for my dinner tonight, but the rest is for my grandma. She’s getting older & doesn’t like cooking… which means she doesn’t eat enough. I’m going to bag it & add the gremolata to the top. I do hope the full flavor of the gremolata stays, it was even better than I expected. I never give parsley the credit it deserves, it’s actually really flavorful especially with the lemon zest! (the rest of the bunch will be going to a chimichurri… yummy!)
I did add 1lb of mild pork sausage, destroying the vegan aspect, but I tasted it before & it didn’t need it to be amazing. She definitely needs the extra protein & loves sausage, so I bent the rules for her. I’ll be making this one again & will likely just stick with the pure vegan recipe :)
