My mother-in-law was just short of her 103rd birthday when she died. She was on no medication. Her motto was always " eat plenty of green veg." Eat greens as often and as many as you can. Love my greens.

Same here! My mom loved ALL veg. greens are important but make sure not to get too many oxalates in one day. The ancients knew about veg soup and a little of this or a little of that, variety. I love bon choy might have to try to grow it, the store used to have it. And mushrooms!

As an ecologist and not a microbiologist or nutritionist I have always had a 'gut" level intuition to eat both cooked and raw vegetables since cooking releases more of the contents of each cell nucleus while decreasing extra-celluar nutrition. Thanks Dr Fuhrman for explaining my hunch to me!

    • @ocelotcat

Yes, that's also a very good adjunctive therapy. For example, putting in about 3-5 Romaine lettuce leaves in your blender with a little plain soymilk , blend that down, then add your fruits, ground flaxseed/ ground chia seed, nuts, dates for sweetness(if desired) and more soymilk then liquefy and that's one healthy meal. You can also add into the blending the cooked white beans (cannellini etc) for extra nutrition, or silken tofu etc. That's a great way to add more nutrients to your daily protocol.

Once you break down the fiber of vegetables, which forms a gel that prevents a sudden rush of sugar, then you are just drinking sugar. Cancer eats sugar. That's how they conduct PET scans. Google it

Most of the green vegetables he mentions are NOT high in oxalates. Kale, broccoli, arugula, lettuce, cruciferous veg. are not high in oxalates. A few greens, such as spinach and chard, contain oxalates at a level that may be of concern to some. It is easy to find greens that are low in oxalates!
