Creamy Tomato Basil Soup and Grilled Cheese Sandwich

Tomato Soup
1 medium onion
4-5 garlic cloves
2 medium or 1 large carrot
28 oz high quality canned tomatoes (San Marzano)
2 cups chicken/vegetable stock
1/4 cup fresh basil
1 bay leaf
1/4 cup parmesan cheese
1 Tbsp butter
2-3 Tbsp olive oil
1/2 tsp salt (adjust to your liking)
1-2 Tbsp sugar (adjust to your liking)
1 tsp chicken/mushroom bouillon
1/2 cup heavy cream

What is it about tomato soup that makes it get everywhere? I make all different kinds of soup all the time, and for some reason it's always the tomato that wants to leap out and explore my kitchen. I'm glad I'm not the only one!
