Tomato Basil Soup

Tomato Basil soup 🍅 comforting and flavorful tomato basil is always a hit. I am a big fan of eating croutons on top of soups, it just brings it to another level than just dunking bread in, BUT if it's sourdough, I can get on board with that plain too. I got the best of both worlds here, though. Homemade sourdough AND croutons 😋
This is the recipe I used to make all the time back at one of my first restaurants....16 years ago? Uff, that makes me feel old. It is so good, though. Honey is the secret in this delicious soup and the bouillon soup base. We always used that in our soups in the restaurant. It makes all the difference! You can just use regular Bouillon, but the soup base (like better than boullion) is the best.
1 onion
1-2 tablespoons garlic
1 tablespoon olive oil
1 heaped tablespoon -2 tablespoons chicken soup base
1 heaped tablespoon - 2 tablespoons beef soup base
2 (32 oz) cans crused tomatoes
1 bunch of fresh basil
Parmesan Cheese Rind ( If you have 6 strongly suggest it, but you can do it without or just shredding parmesan cheese in)
1/4 cup heavy cream
Chiffonade Fresh Basil, 1/4 cup or so
Toppings:
Sourdough croutons
Fresh parmesan
