Homemade Pesto - Dominique Ludwig Nutrition

  • Wild garlic can be prolific during Spring in the UK, if you know where to look for it. The green pointed leaves have a strong aroma of garlic so it is generally easy to spot. Rub a leaf through your fingers and you will recognise the familiar garlic aroma. When you find a patch, it is usually everywhere.
    The key is to pick it the leaves before it blooms into pretty white flowers. After flowering, the garlic can taste slightly bitter and the leaves become tougher.
    Do wash and dry the leaves first.
    Garlic has long been prized for its anti microbial, anti-inflammatory and anti bacterial properties. This is because, like garlic, wild garlic contains Allicin. Allicin is a sulphur containing compound that gives garlic its distinctive flavour and is released when the leaves are chewed or crushed.
    Due to its sulphur content, garlic may benefit liver detoxification and some studies have linked garlic to a reduction in blood pressure, however these effects may be short lived.
    So how do we get more wild garlic into our life?
    1. Make a wild garlic pesto. You may want to mix it 50-50 with a more plain leaf such as spinach, but that depends on how punchy you want it to be. I went full whack with this batch!
    2.Add it to soups or slice it up finely in your omelette.
    3. Use it in your cooking where you want robust garlic kick. Pasta dishes are a great example here.
    if no wild garlic, use basil, and one clove garlic.
    Recipe.
    80g wild garlic leaves or
    40 g baby spinach and 40g wild garlic
    80 g grated Parmesan cheese
    50g walnuts or pinenuts
    150 g of extra-virgin olive oil
    Pinch of salt
    Method.
    1. Add all the ingredients to a food processor and process until smooth.
    2. Scoop into a clean jam jar.
    3. Add a thin layer of olive oil to the top of the pesto from discolouring. Can be frozen.
