    INGREDIENTS:
    CUPCAKES (bake at 180°C/356°F for 17-20 minutes)
    70gr/2.5oz all purpose flour
    70gr/2.5oz almond flour
    150gr/5.3oz dessicated coconut
    1 teaspoon baking powder
    1 pinch of salt
    200gr/7.1oz soft unsalted butter
    200gr/7.1oz granulated sugar
    Zest of ½ a lemon
    3 medium eggs
    1 teaspoon clear vanilla extract
    FROSTING:
    240ml/8.1fl.oz cream
    240gr/8.5oz mascarpone
    200gr/7.1oz icing sugar
    Zest of 1 lemon

    So I have just made this recipe and will need to make another batch as half were eaten before I could frost very delish, thank you.

      Hahahaha I have the same problem here if my husband gets his hands on them 😂. So happy you tried them and liked it! Do frost them though, it makes them even better 😉!

    Can you just bake these without the coconut (say if you cant eat it) would I have to increase the flours to get the right consistency etc . I personally love it with coconut . xx

      Hi Helen, I love the coconut too! I haven't tried it out, but dessicated coconut can't be replaced 1:1 in a recipe, but rather 1:2. Maybe you'll need to use less eggs too, because coconut absorbs a lot of moisture. So it is something you'll need to experiment with 😉

    Out of interest have you ever baked as a full size cake and decorated.

      Yes I did 😁, but not with fondant. I would advise a ring of buttercream around the edges if you're using this mascarpone frosting to fill the cake, because it is a soft frosting. I used dark chocolate buttercream too to pair with this cake 😉
