- Hey guys! In today's video we're making my most popular and easy cupcake recipe, and the only coconut cupcakes recipe you'll ever need! Because it's THAT good! Every layer has coconut flavor in it - the dry ingredients, the wet ingredients, and the fluffy coconut buttercream frosting.

Ingredients List for your convenience:
Dry Ingredients:
1/3 cup sweetened coconut flakes
1-1/4 cups all-purpose flour
1-1/4 tsp. baking powder
1/4 tsp. or pinch of salt
Wet Ingredients:
1 stick, 1/2 cup room temp. unsalted butter
3/4 cup granulated sugar
2 eggs, 1 whole egg, and 1 egg white only
1 tsp. vanilla extract
2 tsp. coconut extract
1/2 cup coconut milk
Coconut Buttercream Ingredients:
1 stick, 1/2 cup room temp. unsalted butter
3 cups confectioners (powdered) sugar
1 tsp. coconut extract
1-2 tbsp. coconut milk

Yeah you don't have to add the coconut flakes on top because there's enough coconut flavor in them overall. But the coconut flakes inside the cupcakes gives it a nice texture. Let me know how they turn out ❤️

I tried the recipe and it’s amazing! I just have a problem with the frosting getting hard when I let it set for a bit. Idk if I’m mixing it right but any tips?
You might have over mixed it. Thats all I can think the reason could be.
