After binge-watching this series, I found a pattern: If the restaurant has fancy green ornamentation from the outside with an Italian name, don't enter.
Mid-rare is the default temp for steak/beef in fine dining restaurants...have you ever watched Hell's Kitchen? He always expects the chefs in challenges to cook their red meats mid-rare and most of the food they send out is cooked at that temperature unless otherwise specified on the ticket e.g. wellingtons, lamb, steak.

What ever happened to health inspections?? Every episode, I am blown away with how these restaurants are in business when the conditions are deplorable in every way. How do they get away with it for so long? Heaven only knows how long they would continue to get away with it if they had not contacted the show for Chef Ramsey’s help.
Simple. America has a very small business friendly goverment. Business friendly means low oversight and regulation. No oversight means not having to do crap properly.
Many terrible restaurants will "bribe" health inspectors with either $ or gift cards. In the US alone, health inspectors can make like $90k a year depending on the area they're assigned to.
That girl has waited a long time to deliver this sentence, it was her dream and I respect it. Actually if I could I would marry her, being that smiling while swimming in shit you have to be a wonderful person or just very high.

I think this is the first one I have seen where he literally changed EVERYTHING. He changed the type of food, he changed the style, he changed the equipment and he got consultants to try and get the people there to change. Basically the only thing he didn't change was the location.

That server is so entertained underneath. She’s trying to not express emotions but you can tell chef Ramseys commentary is amusing her greatly. Clearly, she has probably been doing whatever they had told her too, and they don’t seem very receptive to suggestions, so she is watching someone else tell them how idiotic they are. This is probably her favorite day at that job.

The English people includes the letter R sometimes in between words as a sort of bridge. But there could also be other ways of using it such as the one you mentioned.
