Al passed away in 2018 from his health issues. Heartbreaking when you see the potential for the place by the end of the episode.
Damn that’s tough. Sad truth is that’s the majority of these restaurants on the show. If they last for a couple more years after the episode that’s considered a rare success. I think there’s only one that’s still open to this day.

There's a certain way to run a BBQ /Smoke house. You make what you can sell that day. Brisket, chicken, sausage, pork loin, potato salad, coleslaw, etc. Once you sell out, that's it for the day. What you don't sell you offer discounts and then give the rest to your local homeless shelter.. Word does get around. Firehouse BBQ~ owner.

Any American style smokehouse I've been to here in Australia has the smokers visible, because that's the reason you're here. You want to see it happening. Some of them have a side area you can see from outside the restaurant. Others I've been to have massive glass windows so you can get up close and see the chefs working with the meat. Seeing that they keep the smokers out the back is absolutely fucking batshit insane to me.
@MH-is7eu there's a massive difference between the quality of a restaurant level smoker and the kind of thing you could use at home. These kinds of smokers would be upwards of $30,000 here in Australia. It's not something everybody has access to. It's also such a different type of cooking to what most restaurants do, that its a bit like getting to see a show with your dinner.

Well, most of the restaurants in this programme have something wrong about the food so it's no surprise he doesn't like it, especially when he does the initial tasting at the beginning of each episode.
Honestly I think Natalie was just thrust into this when she had no idea what she was doing. I don't think she should've been so defensive but I understand her cluelessness.
Regardless of her Dad wanting this. If she didn't want it. That's ok. You couldn't blame her Nothing worse than feeling pressured into doing something you have no heart in. She just has to really want it, . And if she really does. Then, and only then, She needs to step it up!
I actually feel for her- A lot of pressure to have your parents name a restaurant for you and say: here's your job. Did she ever want that to be her life? Just because it seems great to others doesn't mean it's what she's suited for. I'm surprised not many seem to notice that.
I like this episode. This team were ready, willing and able they just needed a leader. The owners were great to just side step and let their daughter accept her responsibility without running her down. Good parents. Bought a tear to my eye when Gordon put her straight.
The amazing team they managed to assemble was really great to see. It changes from the lazy chefs that just don’t care that we see all the time. Wholesome episode.

This might have been the easiest episode ever. No nasty or rotten food lying around, no greasy stuff everywhere, no rats or bugs. The meat actually got praised when fresh out of the smoker, so cant really blame the smoker guy for doing bad. No kitchen or restaurant makeover and everyone seemed rather easy to adapt to new rules.
There always seems to be 6 main problems: Bad chefs Poor hygiene Freezing/microwaving food Poor management Bad decor Dated/complicated menu They only really had two problems here - bad management, and reheating frozen crap, but the latter was easily resolved as they were cooking fresh food - they just needed to learn to serve it on the day. Really, the only problem with Michons was Michon. She had no idea how to run a restaurant and didn't care to learn. And that's likely more her parents fault for raising her to be so spoiled and lazy. Everything could have been fixed instantly just by hiring an experienced manager instead of just thinking anyone can run a restaurant.

This was a great episode. This restaurant didn't need too much work just leadership. The staff was very capable and natalie really stepped up! She made me proud😢

That's a really big problem nowadays. Owners need to understand they can't be less concerned and hardworking than their employees. It's a huge disservice.
I've opened almost 40 restaurants as a chef/consultant and I can tell one thing, that everyone should hear...Do not, I repeat, do not open a restaurant if you don't know what you're doing. Nepotism kills restaurants so quickly and efficiently, it's insane.

It's all starting from the management, buddy. The management is the key to all standards and proper process from receiving to customer service. If the management fails, the flow will follow suit.
i love that every once in a while there's someone who's working at these places that just has the perfect personality for the moment, ie the waitress in this episode.
Well they didn't do anything wrong! They were real! They recognized a problem, asked for help, accepted help. The way the mom handled the wings was stellar. That's what you have to do in service, you acknowledge mistakes and politely try to make things right.
Exactly, she never said or evidenced that she wanted to manage a restaurant. Her dad should have hired a manager. That was not her balliwick. Move ‘round is not a solution- that was her dad’s business.

The most wholesome kitchen nightmares I’ve ever seen. I expected the cooks to be a bunch of lazy ass bums who didn’t care but they were all so real and actually wanted to make good food. Seems like all they needed was a wake up call, awesome
i half expect half of them should get fired. Glad to see that they are not really bad people, they just don't know what they're doing, and are willing to learn.
That is one of the only episodes of this show where I felt everyone deserved success. I thought the cooks looked like the usual bunch of lazy bums but in the end you could see they wanted to make good food. Would love to visit this place now.
@@kios05 most of the restaurants featured in the show are like 200-800k in debt. Assume a lot is taxes. You don't recover from that with a makeover, a better menu and some help. Lots of people doing this ARE in bankrupcy and they just apply for a makeover/repair so they can sell higher.
If you think about it before Ramsay went there they actually did double the work. Because of that they tried to cut corners. If they would've used the smoked meat from the same day there would've been less work to do.

There's been a few times where the staff or some of the staff actually was the problem. Like that one 'Italian' restaurant in Colorado where the owner and her daughter and her waiter friends were treating the cooks worse than dirt.
I'm not comparing myself in anyway to Gordon, but i can tell if something is microwaved. I'm not sure how, i just know from the way the heat feels and the consistency.

The first 13 minutes were comedy gold. That waitress lady had some funny ass comments. When she told the other girl "Girl they done fucked up all of this man's food." to the other waitress. I lost it. 🤣EDIT: Damn 1.6k likes. Yall the real MVP.
Ramsey works in the same way military boot camp does. He breaks you down and then builds you back up. A tried and tested method that gets results. It is up to the owners to see the the discipline is maintained. To often it is not and the restaurant fails anyway.
I felt really sorry for the dad, the restaurant is beautiful, the equipment is great, people are clearly getting paid no matter what, clearly the restaurant is not totally fucked. Even the personnel seem very good at their jobs, just completely incapable of surviving alone and it's understandable since the dad was a bit of a control freak. Just the daughter for once, nothing else. I read the revisited that they closed and the daughter claimed it was "doctored". But man, if it's a failing restaurant with bad reviews and that equipment, personnel and decor, it doesn't matter.
Seems pretty on brand for her to find someone else to blame, she basically destroyed her dad's dream makes sense she doesn't want to take responsibility.
Restauranbts that succeeded be like: "Htey add a bit of drama, otherwise it's real". But those failing are always like "Yeah, 100% doctored, we were perfect, just our guests didn't understand that." This reeks of the same bs they are telling Gordon during his stay.
And then he tastes the wings, and they're fucking great, so clearly the guys in that kitchen know how to cook. It is literally just a case of them all trying to tread water because their management isn't taking charge properly. I'd kill to try those wings fresh out the smoker.
I thought the same thing, they both seem so sweet and hard working but their daughter clearly doesn't want to run a restaurant though but it just seems like her parents really want her to have some sort of dream and financial security but she just doesn't seem to have the passion for anything, she just seems like she wants to have money handed to her without much effort

Seems like she said thanks, but couldn't be bothered to find out how to run the place. The fact that she knew so little about food is a bit of an indictment of the parents though.

This might have been the easiest episode ever. No nasty or rotten food lying around, no greasy stuff everywhere, no rats or bugs. The meat actually got praised when fresh out of the smoker, so cant really blame the smoker guy for doing bad.
No kitchen or restaurant makeover and everyone seemed rather easy to adapt to new rules.
There always seems to be 6 main problems:
Bad chefs
Poor hygiene
Freezing/microwaving food
Poor management
Bad decor
Dated/complicated menu
They only really had two problems here - bad management, and reheating frozen crap, but the latter was easily resolved as they were cooking fresh food - they just needed to learn to serve it on the day.
Really, the only problem with Michons was Michon. She had no idea how to run a restaurant and didn't care to learn. And that's likely more her parents fault for raising her to be so spoiled and lazy.
Everything could have been fixed instantly just by hiring an experienced manager instead of just thinking anyone can run a restaurant.

I've opened almost 40 restaurants as a chef/consultant and I can tell one thing, that everyone should hear...Do not, I repeat, do not open a restaurant if you don't know what you're doing. Nepotism kills restaurants so quickly and efficiently, it's insane.

It's all starting from the management, buddy. The management is the key to all standards and proper process from receiving to customer service. If the management fails, the flow will follow suit.

i love that every once in a while there's someone who's working at these places that just has the perfect personality for the moment, ie the waitress in this episode.

Well they didn't do anything wrong! They were real! They recognized a problem, asked for help, accepted help. The way the mom handled the wings was stellar. That's what you have to do in service, you acknowledge mistakes and politely try to make things right.

That is one of the only episodes of this show where I felt everyone deserved success. I thought the cooks looked like the usual bunch of lazy bums but in the end you could see they wanted to make good food. Would love to visit this place now.

@@kios05 most of the restaurants featured in the show are like 200-800k in debt. Assume a lot is taxes. You don't recover from that with a makeover, a better menu and some help. Lots of people doing this ARE in bankrupcy and they just apply for a makeover/repair so they can sell higher.
If you think about it before Ramsay went there they actually did double the work. Because of that they tried to cut corners. If they would've used the smoked meat from the same day there would've been less work to do.

There's been a few times where the staff or some of the staff actually was the problem. Like that one 'Italian' restaurant in Colorado where the owner and her daughter and her waiter friends were treating the cooks worse than dirt.
Gordon has a fantastic palate. How he can differentiate between (1) overcooked, (2) old (3) frozen or (4) microwaved food is beyond me
I'm not comparing myself in anyway to Gordon, but i can tell if something is microwaved. I'm not sure how, i just know from the way the heat feels and the consistency.
Don't forget he's the Top 3 Michelin Star Chef in the world. He has skills that others don't have.
If you work in the industry than you know lol we one of the worst people to eat out but never complain about chain takeout bc theres no expectations

Ramsey works in the same way military boot camp does. He breaks you down and then builds you back up. A tried and tested method that gets results. It is up to the owners to see the the discipline is maintained. To often it is not and the restaurant fails anyway.

I felt really sorry for the dad, the restaurant is beautiful, the equipment is great, people are clearly getting paid no matter what, clearly the restaurant is not totally fucked. Even the personnel seem very good at their jobs, just completely incapable of surviving alone and it's understandable since the dad was a bit of a control freak. Just the daughter for once, nothing else. I read the revisited that they closed and the daughter claimed it was "doctored". But man, if it's a failing restaurant with bad reviews and that equipment, personnel and decor, it doesn't matter.
Seems pretty on brand for her to find someone else to blame, she basically destroyed her dad's dream makes sense she doesn't want to take responsibility.
Restauranbts that succeeded be like: "Htey add a bit of drama, otherwise it's real". But those failing are always like "Yeah, 100% doctored, we were perfect, just our guests didn't understand that."
This reeks of the same bs they are telling Gordon during his stay.
