This is one of the most interesting episodes IMO and here's why: 1) The owner admitting to not knowing there was a makeover involved 2) The chef admitting that he had only seen the new menu 2 hours prior to relaunch This episode has more "behind the scenes truths" than any other episode - I always had a feeling these restaurants were always set up for failure on relaunch night, and that little tidbit by the chef proves it. I just find that this episode provides more insight into the production of the show than other episodes.

You say the owner is using the remodel as an excuse for potential failure - this would be true if he DIDNT like the remodel; however, him admitting that he liked it negates him using the it as an excuse. This was such an early episode I think production was working out the “kinks” and that’s why I find this episode very interesting.

Also, I've never been to The States but, in my neck of the woods, restaurants don't fill up to capacity immediately after they open. Entries are staggered during the evening. Unless it's a buffet type of meal, you cannot possibly expect fifty, sixty, or seventy people to be served within a quarter of an hour all at once. That would indicate that everything was just warmed in a microwave and who wants that?

They’re usually full much, much later into the day (around the time you would eat dinner). I’ve waited pretty long times for food, it can be ridiculous but I would rather have my food actually cooked and prepared well than rushed and microwaved. I will say, there’s wait times where it can be just beyond insane. I’ve once waited for about 3 hours until my family decided to just up and leave as we didn’t even get any drinks served.
One thing that annoys me about this show is this: when Kitchen Nightmares is filming the restaurant is closed. Everybody in the dining room is a plant. That’s why they give so specific critiques. That’s also why everyone arrives at once. Few service kitchens can handle that.

Honestly we have lots of those long sofa connected to each table and most people here in my country prefers those chairs more than the regular singular wooden chair

Also, I've never been to The States but, in my neck of the woods, restaurants don't fill up to capacity immediately after they open. Entries are staggered during the evening. Unless it's a buffet type of meal, you cannot possibly expect fifty, sixty, or seventy people to be served within a quarter of an hour all at once. That would indicate that everything was just warmed in a microwave and who wants that?

@@Arcadia61It’s pretty much the same in the states too, restaurants just don’t fill up immediately like that. They’re usually full much, much later into the day (around the time you would eat dinner).
I’ve waited pretty long times for food, it can be ridiculous but I would rather have my food actually cooked and prepared well than rushed and microwaved.
I will say, there’s wait times where it can be just beyond insane. I’ve once waited for about 3 hours until my family decided to just up and leave as we didn’t even get any drinks served.

One thing that annoys me about this show is this: when Kitchen Nightmares is filming the restaurant is closed. Everybody in the dining room is a plant. That’s why they give so specific critiques. That’s also why everyone arrives at once. Few service kitchens can handle that.
