I just learned there’s a thing called Cal-Mex, which some of your recipes made me think of - lighter and fresher than Tex-Mex which I’m more familiar with. More fish and chicken, lots of fresh and light ingredients, still savory but less heavy spices. Yum. Thanks for the recipe ideas. That spinach artichoke chicken looks crazy good.

It all looks so good. I struggle with meals because I do not like cooking. I do not have any natural instincts regarding cooking. And I have a vegan, a vegetarian, a nut allergy and a carnivore to accommodate in my family!
Jennifer I tried the fish recipe with salmon and it was delicious. Now my coconut rice didn’t turn out the way I excepted. I used my instant pot. Still trying to learn how to use it. Instead of string beans I used a bag salad with Avocado Ranch dressing from Costco which went well. Thank you for the inspiration.
While I was watching you make the trout recipe my husband came up and said "Are you going to make that, it looks good!" I usually have to persuade him to eat fish, so we will definitely be trying that one out! Thanks so much for the inspiration.

I loved all of these recipes! I cook similar to you as well. Some of my substitutions have been a bit questionable but my family has always eaten it up. LOL I have a great recipe for fish tacos that is really a dump-it-all into one large fry pan and it is one of my family's favorites. We'll add these to the master list after we try them. Hi Jennifer, While I was feeling lost last week because of meal prepping, I came here and took two recipes from you! First, was the Steel-head Trout and coconut rice. That came out wonderful. I usually use salmon in my recipes but saw Trout at Aldi and decided to try it. We make a similar recipe to that, but it was so good, that I would like to swap it out. The rice was a nice change-up and I will be doing that more often. Last night we made the chicken bombs. I boiled the chicken in chicken broth and seared both sides with some spices before shredding it. We had left over blue cheese crumbles and threw some in there too. They remind me of a Hot Pocket! We have 5 leftovers and are going to freeze them, just to see how well, or poorly, they come out. The glazed carrots were pretty good, considering I don't usually eat carrots (I know, I know) Anyways, just wanted to let you know that I really appreciate your creativeness and am looking forward to more content from you.
This was such a joy to watch, and I am definitely inspired! I want to try every single recipe you shared... I appreciate all the work that you put into making these videos. I know it must be quite a challenge to try and video yourself making these recipes, I can only imagine...but having the visual of the process is so helpful! I would love for you to come and cook everything you made for me! Isn't food so much more delicious when someone else makes it? These look like great recipes -- ones my hubby and I would eat. A question: When you fry, what type of oil do you use? I'm all about good fats, so I'm wondering if you use tallow or lard? Or something else? Good fats are good for you and I'm glad to see you don't skimp on the fats in your recipes. Love the music you choose too!
Jody, tell me more about tallow? I've been seeing this more and wondering what the flavor is like?? I tend to cook with coconut, grapeseed, olive oils and ghee.
@@KarenDGobsmacked Tallow is rendered beef fat. Its slowly melted and strained and cooled to a hard consistancy for storage. It's shelf stable. Tallow is what McDonald's French fries used to be fried in. It has a high smoke point so its good for deep fat frying and its nutrient dense. There are many videos on how to make your own tallow or you could check with someone locally selling beef or a butcher shop to see if you can buy it.

Wow...delicious ideas!! The more I watch and listen, I see that you not only do IF, but you eat small portions it seems. You shared the chicken breast meal and you only got one chicken biscuit .
That chicken artichoke and spinach dish was absolutely my favorite meal!!! Had it yesterday and saved some sauce to make a baked dip served with nachos. I'm trying the steak tonight and the stuffed biscuit tomorrow. I'll be trying salmon with the pineapple and hoisin sauce real soon. Everything looks like my favorite 🤣 thanks for the inspiration and thank you for the video you did on IF I'm getting the hang of it. I think it'll be the right way to eat from now on for me. 😊
