🗝️ Beef Broccoli Ramen
2 packets Ramen noodles (seasoning discarded)
1 lb broccoli florets
1 lb top sirloin steak, thinly sliced
Olive oil
2 green onions chopped
Sesame seeds for garnish
Sriracha sauce (optional)
Sauce:
2 cloves garlic, minced
6 Tbsp soy sauce
1 tsp ground ginger
2 Tbsp hoisin sauce
3 Tbsp brown sugar
1 ½ Tbsp cornstarch
½ cup warm beef broth (or water)
2 Tbsp sesame oil
Fill a large stockpot halfway with water and bring to a boil. Add the broccoli to the boiling water. After 2 or 3 minutes add the noodles and cook for 3 minutes (or according to package instructions). Drain the broccoli and noodles and set aside. Season steak with salt and pepper. Slice the steak in thin pieces and in a frying or grill pan over medium heat, cook 2 minutes on each side in olive oil. While beef is cooking, mix sauce ingredients together in a bowl. Remove beef from heat and move to a separate plate. Whisk sauce in the pan over medium heat until it thickens up. Add beef immediately. Add broccoli and noodles and stir until all noodles are coated. Remove from heat. Top with chopped green onions and sesame seeds and sriracha sauce, if desired. Enjoy!
🗝️ Easy Chicken Pesto
3 to 4 large chicken breasts
2 Tbsp Olive oil
8 oz basil pesto
2 large tomatoes, sliced
6 slices mozzarella cheese
Salt and pepper to taste
Preheat the oven to 350 degrees. Season chicken breasts with salt and pepper on both sides. Pour olive oil in a grill pan over medium high heat. Sear chicken breasts on both sides until brown but not cooked through, about 3 minutes per side. Transfer chicken breasts to a greased ovenproof dish. Top evenly with pesto, mozzarella cheese, and sliced tomatoes. Sprinkle tomatoes with additional salt and pepper, if desired. Bake in the oven for 30 minutes, or until chicken is cooked all the way through. Heat under the broiler for 2 minutes before bringing out of the oven. Serve with your favorite sides. Enjoy!
🗝️ Puff Pastry Salmon with Cucumber Sauce
2 sheets of puff pastry, thawed
4 6 oz salmon filets
1 egg
Salt and pepper
Sauce:
1 large cucumber, shredded
½ cup sour cream
½ cup mayonnaise
1 Tbsp dill, chopped
Salt and pepper to taste
Preheat the oven to 400 degrees F. Roll out the puff pastry on a floured surface. Divide into four pieces. Place salmon, seasoned with salt and pepper, top down on the puff pastry. Beat egg in a separate bowl and brush the edges of the pastry with egg wash. Close the bundles and secure with egg wash. Flip salmon bundles seam side down in a greased baking tray. Brush egg wash on the top of the bundles. Bake in the oven for 25 minutes, or until salmon is cooked through. Meanwhile, combine all the ingredients for the cucumber sauce and set aside. When the salmon is finished, serve with cucumber sauce on the side and your favorite salad.

These meals look delicious! I’ve come to realize over the past few months that cooking a meal isn’t the part that exhausts me - it’s the dishes afterwards. So my new goal for ‘easy’ meals is one pot, minimum prepping utensils! I haven’t experimented with instant pot meals, but that would be ideal, so I can wash all the dishes while it cooks 😅

When you don't feel like cooking, all you need is an idea. Save these ideas for the next time. I haven't done the salmon en croute but I have done salmon fillets covered with pesto and wrapped in foil many times. Wrapping it in puff pastry would make it company-ready, don't you think?
I got very inspired by the pesto chicken recipe, I will make it within the next couple of days! I am thinking about adding some single cream to the pesto as well and to maybe drop some olives or sun dried tomatoes next to the chicken breasts 😊 Goodness me, I just love eating! 😃

These look great as quick weeknight dinners and I can’t wait to try them, but I have to be honest-when I don’t feel like cooking, chopping, prepping meats and sauces, rolling dough, and stove-top cooking feels way too much for me. Perhaps you can do a video on ‘no prep’, assembly only meals that you throw into the instant pot, oven or don’t even require cooking.

I just cooked the beef broccoli ramen. I just ed flour to thicken the sauce. I had to purchase a few of the sauce ingredients. There’s enough for me for several meals. I will freeze some. It was delicious! I used honey instead of brown sugar. I’m not the greatest cook but am trying to cook more at home. I hope to try the chicken recipe soon!

I made the Beef Broccoli Ramen tonight and it was delightfully delicious! Thank you for sharing your recipe.
Looks delicious! Adding them to next week’s menu. Some of this would also be super easy to prep ahead for busy nights, such as the sauce and beef to just toss with quickly cooked noodles and broccoli. Shredded carrots would also make a great addition to that one!
My oldest (11) loves watching these with me. She loves swiping basil leaves from our kitchen plant, so she was very interested in the chicken dish!

Hi Jennifer, All these dinner dishes look delicious! I just pulled some garden pesto from the freezer, so this is on the menu soon. I also like to steam my broccoli while cooking my pasta below; over cooked broccoli is a pet peeve so I keep a close eye on it this way.

It was a prepared salad from the store. It was called "sunflower blend". When I don't feel like cooking I use prepared salad

Great meals, but making a ramen sauce from scratch is more cooking than I am willing to do on nights I don’t feel like cooking.
Keep a stock of those bottled cook-in sauces on hand. Any flavour you like will do the job. Tomato based for an Italian flavour, korma for Indian, etc even a tin of cream of mushroom soup.. You can also buy packets of miso which last for ages in the fridge and mix it with a bit of water and throw in some sliced mushrooms.
I'm sure you could find a jarred sauce that would work...
I think if you omit the dry spices and just use the flavor packet that comes with plus the sauces she showed (soy, etc) it would be even better! I personally love shrimp ramen (it got me through some tough days) and I couldn’t bear throwing out the flavor packet!

I eat those slices of tofu that have been marinated. I like the Teryaki ones because they are a neutral flavour, not too hot or spicy. I cube them or slice thinly.

I'm not sure what kind of magic ramen noodles contain, but... my daughter will try any previously "icky" vegetable/new food if I put it in ramen noodles, so I'm always looking for new ways to cook them.

All the recipes look great and I'll probably try them. However, I am not sure if I'd be going to these on days I don't feel like cooking. They are simple enough but still too many steps and dishes for busy days.
You could always use a ready made sauce instead of making it from scratch to make it easier...
Hello Jennifer! I wanted to “challenge” you to try omitting the dry spices from the ramen recipe and use the flavor packe combined with the wet ingredients. I believe it will be just as good if not better, and won’t be wasted! And even faster cook time. 😊 my mom does a version of this with chicken and stir fry veggies and it’s always so good. I couldn’t believe you were only using two packets to feed everyone 😅 or you could use the sauce as a marinate for the meat as well.

How do you stay so disciplined to eat only a small dessert portion?!! I tried just having a small dessert like you but then I end up just getting more licks and tastes of the dessert or just completely double fisting stuff lol.
