I tried this out and it was amaaaazing!! I don’t usually like coconut cream or milk, but it went really well with this dish. I added some cayenne for some extra kick and it was very balanced and taste experience! Highly recommend everybody to try it! 🤗 cheers

The coconut cream in curried potatoes or chick peas, or in the Caribbean we mix the curried chick peas and potatoes. Adding the coconut cream, milk makes it way better too
When the coconut cream comes out, that's how You know You are about to have amazing dish! I haven't tried to pair it with a jackfruit, so thanks for the (delicious) idea :)
Is there any reason you didn't just cook Capsicum on low in the same pan as the Jackfruit? Why add the extra step chaps? Does Roasting really make that huge a difference? Genuinely curious.
Saute leek on high heat with jack fruit. Paprika, smoked paprika, black pepper, salt and garlic powder. Add tbsp of tamari. Add spices, juice of half a lemon. Deglaze pan. Add cream from tin of coconut milk. Taste and season. Slice roasted peppers from jar. Toast tortilla, add vegan cheese, leek filling, red pepper, chilli, finish with more vegan cheese. Once browned turn over. When ready cut in half and serve 4-5 stacked up on plate xox
I approve… I couldn’t find the leeks but green onions worked just as fine.. this was soooooooo delicious like I really had to double back cuz I couldn’t believe it wasn’t chicken..
I haven't tried it yet , but I could imagine mashed up tofu instead of coconut cream would happily fit in . I do a tofurky with jackfruit and tofu backed in pastry and there its works well.

Nice recipe, but what about buffalo sauce instead of soy sauce in the BUFFALO quesadilla? Lol. Also, I'd do blended cashews instead of coconut cream.
I totally agree, cashew's cream will taste better and corn tortillas, it will bring them closer to real Mexican flavor
