    -- RECIPE --
    FLOUR TORTILLA
    ▪310g or 2.5c AP Flour
    ▪8g or 1.25tsp salt
    ▪5g or 1 1/3tsp sugar
    ▪50g or 1/4c oil (canola, light olive)
    ▪180g or 3/4c water
    Add ingredients to a food processor and spin until dough comes together into a cohesive ball. Alternatively you can mix in a bowl with a sturdy spoon. Flip onto work surface to knead and further develop gluten for 60-90 sec, flouring surface/dough ball if it gets too sticky.
    Divide ball into four equal pieces (125g each). Round each piece into a ball then cover and set aside to relax for about 5 mins.
    Roll out into about 10”/25cm diameter rounds. Cook each in a nonstick pan over medium heat for about 60 sec on first side until tortilla is bubbling. Flip to side 2 and cook for another minute. When done, cover with a towel to keep moist and pliable.

    CHICKEN + MARINADE
    ▪2 8oz chicken breasts (or another lean meat)
    ▪10g or 2 1/4tsp olive oil
    ▪10g or 1 2/3tsp salt
    ▪Zest of 1 lime + juice ½ a lime
    ▪3-4 garlic loves, minced
    ▪2g or 1tsp black pepper
    ▪3g or 1 1/4tsp chili powder*
    ▪1g or .5tsp dried oregano
    ▪Splash of tequila (Tbsp or so)
    ▪10g or 2 1/4tsp agave syrup
    *chili powder in the US is typically a mixture of chili pepper, “spices”, garlic, and salt
    Pound chicken out into about a 1”/2.5cm thick cutlets. Add to bag with other ingredients and massage to coat. Refrigerate for 10-15 minutes to marinate.
    If grilling chicken, cook on a high grill for 5-6min on1st side then cook on side 2 for about 2 min. If baking, bake at 450F/230C for 12-15 min. Internal temp should reach 150F/65-66C.
    Cut into small cubes, about ½”/1-2cm.

    ASSEMBLY AND COOKING
    ▪225g/.5lb Pepperjack
    ▪225g/.5lb Mild cheddar
    ▪125g/.25lb Provolone
    ▪Pickled jalapeno, chopped
    ▪Neutral oil (canola, light olive, avocado, etc)
    Shred cheeses using largest holes on grater and mix together.
    Preheat nonstick pan over medium.
    Spread cheese blend over ½ a tortilla followed by chipped chicken, pickled jalapenos, and another sprinkle of cheese blend and fold over.
    Add a long squeeze of neutral oil into pan and lay folded quesadilla into pan to cook for about 90 seconds, using another pan on top to ensure good contact for max crisping. When nicely browned and crisp, flip quesadilla to side 2, returning the top pan to press down, and continue to cook for 1.5-2min.

    CHIPOTLE RANCH DIPPING SAUCE
    ▪125g mayo (i rec homemade or duke’s)
    ▪Juice of ½ lime
    ▪10g 2 1/4tsp hot sauce (i usually use frank’s)
    ▪50g or 3.5Tbsp sour cream
    ▪1 chipotle chile in adobo
    ▪1 garlic clove, pressed
    Add ingredients into a tall sided container and spin with an immersion blender until smooth.

    In 11 minutes, Brian showed:
    - How to make homemade tortillas without a press in no time,
    - A three cheese combo for quesadillas that I wouldn't have thought of (specifically the addition of provolone, which sounds brilliant)
    - A new marinade and technique for grilled chicken, and
    - A chipotle ranch sauce.
    And that's not even mentioning the whole quesadilla coming together.
    The value per minute on this channel is pretty well unmatched.

      Flour tortillas are always done without a press. The press is only used (and required) for corn tortillas. FYI

    Pro tip from someone who has been making quesadillas for lunch almost every day for years, sprinkle a little pinch of salt on the quesadilla immediately after you flip it in the pan, the oil will make it stick and with the crispiness of it all, it turns out giving tortilla chip vibes. Perfection.

    i definitely recommend mixing the lime and the garlic for the sauce together first and letting it sit for about 10 minutes with just those two ingredients. it adds a whole new depth to the sauce. basically what youd do with hummus when you start with the lemon and garlic.

      @A 2nd Opynyn it mellows the harshness of garlic and gives it a more blended taste. Im not a chemist or chef, but it was in a book from a Michelin chef who recommended it. Honestly took my hummus from compliments to requests.

    I made this yesterday for my birthday dinner and it was awesome! The tortillas were so easy to do and turned out fantastic. The chicken was super flavorful and the cheese blend gave it a great gooey texture. The chipotle ranch was a perfect addition and really made it shine. I added some roasted/lightly caramelized onions to the quesadilla to put my own small twist. I will definitely be making this again, and making tortillas regularly from now on.

    If you want to bypass making your own tortillas, the uncooked Tortilla Fresca tortillas in the refrigerated section at Costco are a great option. Just heat them the same way as in the video.

      When I don't want to make flour tortillas, I use I use a brand I buy when I go to a little Mexican produce stand called (checks package) Leyva's. I don't think I've ever seen them in grocery stores but they're the best bagged, unrefrigerated off the shelf commercial tortillas I've ever eaten.
      The Mexican lady who owns the stand also sells corn tortillas with a Mexican flag on the package which are also better than any corn tortillas I've ever bought from a grocery store.

    Made these for dinner last night and they were excellent! Marinated grilled chicken full of flavor. Homemade tortillas easy to prepare and with the exception of trying to regulate the temperature on a new range turned out perfect. I highly recommend the mild cheddar (I used hoop cheese) pepper jack and provolone cheese combination. The sauce is perfect for dipping! This is a winner! Every element working perfectly together!

    I made these for the fam yesterday minus the fresh tortillas and lemme tell you this recipe is LEGIT. Will definitely be using this recipe from now on. Best quesadilla I’ve ever had. Even blows restaurants out of the water. Amazing!

    I tried home made tortillas for the first time because of one of Bri's other videos, and I assure you, they are game changing. They are so much better than store bought that I ended up eating a bunch of them plain while I prepped the rest of the dish.

      @@ImVonKiron_ I've not eaten at any high level Mexican restaurants cuz I live in NW Ohio, so, no not for me. I'd guess the Mex restaurants around me just buy theirs also. They just have a texture and flavor I can't describe other than they made me realize that a flour tortilla doesn't just have to be "the thing that holds the good food". The tortilla WAS a part of the experience.

    I tried yesterday evening, and it was GREAT!! Also, i did the tortillas by hand, and it was really fast! The only problem is that in Italy it's not easy to find pepperjack or even mild cheddar. So I ended up using cheddar "sottiletta" (slice) and provolone :) Thanks bri!

    I do agree with having something on the side of quesadillas. The usual thing that I have alongside my quesadillas is some smashed avocado with a bit of lime juice and s&p.

    Made these for supper tonight with the dip and they were awesome!! I was able to put it all together in less than an hour to have the final dillys ready for the pan. My husband actually let out a 'Mmmmmm!' after taking the first bite. Delicious!

    I started making homemade tortillas (corn and flour) this year and they are totally worth it. Store-bought flour tortillas are loaded with sodium, but I can make them at home with way less. I use my stand mixer and tortilla press...for flour tortillas, I also use a rolling pin (the press makes them thick and too small for burritos and quesadillas).

    I Highly recommend butter instead of oil when you put the quesadillas into the pan. It's so much better!

      I've found that butter tends to make the tortillas a bit soggy and not as crisp as using Canola Oil. I will sometimes throw a pat of butter into the pan once the Quesadillas are finished and ready to remove from the pan. Just a little and then spin them through the butter as it melts. Then remove and cut.

      @@Brooaz it definitely is possible for them to get soggy, butter has water in it that sogs things up when you fry with it moreso than something like canola or olive oil would.

    Most of the dishes I eat include eating tortillas with it. A lot of times it’s store bought but man nothing beats homemade. It is a very huge difference

    Dude, I made these and they were great! I don't know if I liked the homemade tortillas of the chicken more. I'm for sure looking down my nose at the store bought tortillas from now on 😄

    My late bisabuela (great-grandma), who came to the US from Michoacán (Mexican state) when she was young, would make tortillas by hand for my mom and the rest of the family back in the day; my mom finds handmade tortillas nostalgic as a result, and watching this has me thinking of making our own :P

    I use the same technique for cooking my tuna melts. I put a dish on the sandwich in the pan with a can for weight to get it evenly browned and the cheese all melted (I like a lot of cheese).

    I personally would go a bit easy on the cheese, but otherwise, this looks absolutely mouthwatering! And the sauce GOOD indeed. I always eat my quesadillas with sauce.

    Mexican here. If you want tasty tortillas from the grocery store, get TortillaLand ones. They are found at the refrigerated area of my Kroger and Walmart. I live in Columbus, OH, for reference.
    These taste exactly as what you can get from a grocery store in Mexico.

    I ran out of organic sunflower oil, tried organic soybean, both inside the tortillas and frying, and..I think the organic sunflower oil is a super terrific choice. The soybean fried ones seemed to absorb a bit of the oil, and were more chewy, (maybe my temp was lower, but, still..) whereas the sunflower oil ones are light, flaky, crispy, and not a hint of being oily. Every time I used organic sunflower oil the quesadillas turned out fantastic!
